      It's not heat that's "freezing" the milk. That's bacteria breaking down milk into curd and changing its texture from liquid to solid. This would have been done without the last step too, it would have just taken longer.

      That's the normal way used to make curd... it's just that they added sugar to make it sweet... we add lil amount of curd to lukewarm milk and leave it...if the weather is too cold then it's wrapped with old sweater in our houses and if even then it's taking too much time then it's put on slow flame in some utensil or u can place it near a fireplace so that it keeps getting heat

    i think whatever recipes u all teach, but the misti doi in local sweet shops of kolkata are >>>>
    None cant replicate that, mainly of gobindo and balaram mallik

      @Punit Shut up stupid. Indian sweets are the best and far healthy than cakes and candies. Refined sugar came after industrialization boomed. Its completely western. Traditionally, we use mishri or jaggery, which are quite beneficial to health. Also, Ayurveda describes the amount served and the timings of sweets. Mishti doi is a great dessert after meals.

      Indian sweets should be regulated. It contains highest amount of sugar and cholesterol from ghee.

      @@robertlee-nq6mg First of all. Sugar is not Indian. India uses Jaggery or mishri. Far better than sugar. You can google their health benefits. Second, ghee is good for health when consumed in small quantities. BTW, if u go to Punjab, you will see that they consume a lot of ghee, still they are the fittest. Ghee is not for lazy potatoes. People work hard, thus, they can consume this much ghee without any problem.
      Indian sweets are far far better and healthier than western desserts. The ingredients used (like coconut, kesar, besan, milk, silver) are beneficial to health. Ingredients are used in proper amounts.
      And if u are a binge eater and want to replace every meal with sweets then yes, you will get diabetes. Sweets are consumed as comfort food after meals and in special occasions. Now shut up and don't teach me about my country.

    This doesn’t seem to be like the recepie of Misti doi .. it’s not only about the sweetness but the flavour texture and all but the recepie somehow didn’t convinced me hence I will look fr some other alternative videos to prepare it

      From what I understand you either added the curd too early on into the milk (you should only add it to Luke warm milk) and some tips are strain it and also mix well. It’s pretty common to mess up or get it curdle textured.👌🏽 also let stand in mildly warm areas. Places that are pretty hot can easily destroy the dessert. Happened to me a lot lol. Btw This is if you want to let it ferment like curt does not cooking it look it up it’s a lot better/easy

    Looks delicious but I didn't find it easy for sure.. I can't put anything on stove for so long.. gas khatam ho jaayega.. mummy se maar bhi khaane padenge.. sometimes my online recipes fail u know..

      I tried making mishti doii following an online recipe.
      And guess what, mishti doii didn't set at all. As a result I ended up wasting all the doii left at home and there was no extra doii left to be used as Jaman so that new batch of doii could be made. Failure number 1.
      Found another recipe of preparing Jaman without doii, with some chilli stems and all. Made doii out of that jaman, later it resulted into some pathetic and stinking doii, smelled almost like some rotten eggs. That was failure number 2.
      And during this lockdown now we weren't left with any doii at home. (Thanks to the local diary that started keeping doii).
      My Mom shall surely disown me if I enter kitchen to try out any other online recipe.

      no, you need to put curd on a piece of cloth and tie it, then hang it over a glass or above the sink for few hours to get rid of the liquid in the curd
