      He's an epic chef. you can sit at the sushi bar at the Wrench and Rodent in San Diego and watch him up close on the nights he is working.

      He doesn't give a recipe but only the ingredients. You can play around with different ratios to see what you like. I'll ask him for some more specifics and post it for you to have a base to start from.
