Ended up Ruining the whole thing... 1st when i made a dough, it was so dry (later fixed it) and crumbly. Secondly when i added it to boiling water, it dissolved🫠 and i threw it 😛
Never stir caramel. Swirl the pan. It will crystallize.

Half a cup of water, 1 cup of sugar, 2 table spoons of butter & half a cup of cream is the right way to make it

Don’t stir it until the milk/cream is added. That should take care of the crystallizing.
Or you can add lemon juice to the dry sugar. I heard that stops the crystallizing also
You can add honey or glucose syrup
You’re not supposed to stir it almost fully melted. Stirring too early makes it grainy unless you’re using different ingredients than shown

Add it slow at first to temper it and keep whisking also make sure the cream is room temperature
