      I thought of the same thing when i saw the whole chicken 😂 such a fun dish to make.
      But the amount of salt that will be needed for taste blew my mind even after putting some regular chicken broth.

    A lot of spanish/Caribbean countries sear whatever meat they are cooking first prior to making the dish. My family is Panamanian and that’s a common cooking practice

    I really enjoyed watching you cook this. I appreciate others cooking styles and experiences, I learn a lot by doing this (and you’re pretty fun to watch ;) ).
    I’ve never heard of dried kelp, I’m totally intrigued (where did you get it?).
    What temp did you register?
    That’s a nice Staub pot… I love cast iron. Personally, I have a whole collection of Le Creuset. They have a HUGE pot that would work great for this, it’s called the Goose Cooker (15.5 quarts), LOL.. I’ve had mine for 25 years and it’s great!
    I agree, Cilantro is an herb from heaven, for sure! I feed the organs from the pouch to the dogs, they LOVE it.

    I think the girls would love some Cambodian beef skewers! So simple and packs a big punch of flavor. Also accompany it with some pickled carrots and daikon.

    Made Chicken spaghetti for the first time.....green pepper onion celery fine diced then softened in stick of butter... 5 chicken breast boiled to make broth to cook 8 oz of spaghetti in add can of rotel cream of celery cream of chicken stir in veg in return chicken add 16 oz of velvetta in cubes to pot stirring continually broth is usually 4 cups with cheese just becomes sauce.... Yum

    My mother always braised whatever meat before making soup. She said the meat would look more appetizing than just pale color. I braise the meat as well but I learned that from my mother. It might be a latino thing.
    Benji, you mention a lot of celancho in your recipes. Is that a special kind of cilantro or am I just hearing wrong?

    The texture of home poached chicken is better than Costco rotisserie chicken but the stripped carcass from costco rotisserie chicken makes a very gelatinous stock.

      Which is super healthy! It's a natural collagen. I always get a gelatinous stock when cooking chicken. It's all the skin and the white ends that make it that way.

    All I could hear was organ soup . I’m trying to get better at eating different meats. I love watching your videos and it helps. You make everything look so good. I would LOVEEEE to try your food YOU cook!! 👨‍🍳

      You would never know there's organ meat in the soup, but it will add so much flavor (and it won't taste like it whatsoever). Trust me, I always add it to the chicken broth and husband who won't hear about it never knows it's in it. But the broth or soup always tastes amazing to him. Organ meat will also add a ton of minerals to make your broth even healthier.

    The innards from one chicken are not much but you can freeze and save for something like dirty rice.

    Benji I noticed you didn’t rinse off or clean the chicken or the giblets (organs). I was taught to clean and rinse off meats is it not necessary to do so…? Also, I really enjoy your videos you always educate on new techniques. 😊

      Never rinse the meat! It will spread bacteria all over. The meat when cooked loses all that bacteria on hight heat so it's not an issue.
