What can also help is focusing on your basket amount. If you are using an 18 gram basket for example, up the grams to 18.5. It could clear the space between the shower screen and the puck. Causing more consistent pressure

I am also in Seattle. Favorite places to get coffee lately have been U.R.L (try the apple prosciutto sandwhich) and the newer Anchorhead location (the biscuit they have is 🔥). Have you considered upgrading the machine with an Auber PID? I did that and switched to a single hole tip steam wand. Now the steam power is improved (as much as you can expect). I also wait ~2 mins after turning steam on for consistency which has helped. I don't really need dual boilers so I feel I will keep this thing for a long time.

I noticed you used the coffee pushed out through the bellows in your drink. Saw people say that was a bad idea but maybe I should give it a try as I hate to throw it away all the time, even if it is only half a gram!
Nice workflow! I think Lance said to flip the steam switch for 5 seconds after the brew light comes on as well. Has this method been consistently good for you? No weird change in temperatures? Also, you said you were brewing with the 6 bar OPV. Why not the 9 bar OPV? Great video!
What grinder setting are you using on the DF64? I just got one last week and anything below 20 is choking my bambino plus :(. I'm new to espresso machines

I have a 6 bar spring instead of the standard. That's the only mod besides an IMS precision screen and basket.

I usually am around 15-18 on the Turin. Of course, it might be calibrated slightly different than yours. What kind of recipes are you trying?
