    For those of you who have been reading/watching of a while, this is an updated version of my original Spaghetti Squash 101 which I posted several years back. We decided it was time to freshen her up, so here we go… wheeee!
    Spaghetti Squash is an oblong yellow variety of winter squash that has a mild, sweet, nutty flavor and, when cooked, has long thin ‘spaghetti-like’ strands, that have a little bit of crunch to them, kind of like an al dente pasta.
    I’m not going to tell you that it tastes just like pasta, because it doesn’t, it tastes like squash, but if you’re open to trying something new it’s a great nutrient-dense, low carb alternative to traditional pastas.
    Season
    Its peak season is the fall and the winter but you’ll see it in grocery stores all year round and I find it to be a great veggie to use throughout the year. It’s as delicious and versatile in the Summer as it is in the winter.
    Nutritional Benefits
    Spaghetti Squash is packed with beta carotene, vitamin A, potassium and folic acid. One of the perks of this winter squash is that it’s high in nutrients but low in calories; one cup of spaghetti squash has just 40 calories, so it’s a great addition to just about anytime of diet.
    Shopping
    When you are shopping for spaghetti squash you want your squash to be hard on the outside and then feel surprisingly heavy for their size. You may notice that the shades of yellow on the skin will vary, some will be lighter some will be darker, but that really doesn’t affect the squash at all so you don’t need to pay too much attention to it. However, you do want to make sure that there are no soft spots or green spots on the skin of your squash.
    Storing
    Spaghetti Squash likes to be stores in a cool dry place. I leave mine right on the counter, and it will last a good three to four weeks.
    Preparation
    When you’re ready to work with your spaghetti squash, you’ve got a couple of options; if you’re in a hurry you can steam your spaghetti squash in the microwave (shown in the video) but for the most flavor roasting it is the way to go.
    Serving
    Spaghetti Squash makes a great side dish and can be kept super simple; adding a little parmesan cheese and red pepper flake makes for a sensational dish
    Another option is Spaghetti Squash and Meatballs (I sub out the past a for the squash)
    And then of course there’s the Spaghetti Squash Chili Mac
    Simply layer your favorite chili on top of the cooked squash and sprinkle with a bit of shredded cheese, cilantro and onions.
    And one last idea is my Spaghetti Squash and Garlicky Greens

    This is great. I'm glad you showed how to do it in a microwave because I'm a senior and don't have the strength to cut the squash. This way I can start it in the microwave to soften it up and finish it in the oven.

    getting my daughter to eat vegetables is the hardest thing I have experienced so far as a parent. I watched your first video about spaghetti squash and decided to make it because she loves spaghetti so much. we now have it once sometimes twice a week. better yet she asks to have it for dinner almost every night! I can't tell you how grateful I am to you for making these videos they are extremely helpful

    Made spaghetti squash tonight, thanks to you! Topped it with some kale that had been sautéed with shallot, sun dried tomatoes, garlic, lemon, rosemary, crushed red pepper, and olive oil. Thanks for the inspiration.

    You have taken one of the simplest recipes since boiling water and shown it in a straightforward and entertaining manner. The sound, lighting and presentation are first rate. I will check out your other videos and probably subscribe. Tonight I’m using some leftover Mexican braising sauce I had from a top round steak. Glad I found you and spaghetti squash.

    I'm surprised you didn't talk about roasting the seeds! They're awesome! I also roast pumpkin seeds & butternut squash seeds. We'll mix them together and I honestly can't taste any difference between them!

      How do you do that? I have not roasted seeds before from squash and I have these very ones in my garden right now. I would love to know how you roast the seeds.

      Barbara Rickman You just toss them with oil and salt and roast them at about 350 on a sheet pan. It takes about 5-10 minutes.

    Thanks for the info. My neighbor gave me squash out of his garden. I boiled w/onion ,fried it, and then was told it was winter spaghetti squash.😄 "Now what ?", I asked myself. Although it was pretty good my way, I'm very anxious to try it the real way. 😇 Plus, I think you answered all my questions.Good job !

    just recently started making Spghetti squash. I usually just add some cooked chicken or shimp into it and since I eat it at work I reheat it with a bit of butter and it's amazing. I even got my cousin to start eating it after she tried mine. then my mom tried it and now she's addicted. my cousins girlfriend has 2 twin 4 year old boys and even they liked it!

    Having arthritis in my wrists, spaghetti squash is too hard for me to cut in half, uncooked, but now I know it can go into the microwave uncut solves this problem. Thanks!

    I use the spaghetti squash as a base and put a curry sauce with oven toasted Cauliflower cheese bites on top ... my "non-veggie loving" eat it up!!

    I love using it as pasta for shrimp alfredo. I just add alfredo sauce, shrimp, and maybe some avocado on top. Super yummy.

    Love that Chili idea! I love it with spinach,goat cheese and bacon. I grew about 17 in my garden this year. You can also cut it in half with a little water in the crockpot let that go for 5 hours.

    I recently read of someone who cooked spaghetti squash in a slow cooker with a cup of water on low for 6-8 hrs. Not a bad idea for those who work & want to come home to already cooked food. To extend the cooking time for a longer work shift & have it not be overcooked, start with the squash & cooker liner pot cold from the refrigerator & it will be about a 9 hour cook time. I haven't tried this but plan to give it a go one of these days. Also, because of what high heat can do to the quality of EVOO, I would use either avocado or coconut oil for roasting. Just my personal choice.

    Love it! I always forget about spaghetti squash and tend to work with other squash choices. I need to go buy one very soon. Love the roasting option more than the micro because it does taste a lot better.

    I came across 2 spaghetti squash volunteers in our yard from discarded seeds from last year. I am going to to try your recipe of chili on spaghetti squash sprinkled with cheese! Are chili is homemade so I believe it is going to be very good!

    I love spaghetti squash, but hesitate to cook it because it is so hard to cut. I've always done it in the microwave, but I was told to cut it in half and set it in water to cook. I'll have to try poking the holes this time. That seems so much easier! Thanks! :-)

      I tried it tonight, and it was SO MUCH easier this way. Too bad my spaghetti squash had gone bad and it was all mushy inside. Either that or I overcooked it. I'll definitely be cooking it like this from now on. :-)

    Great video. I'm new to spaghetti squash but not new to the kitchen. I find that the sweetness of the spaghetti squash squash runs a tad contrary to Italian dishes. In other words trying to make a sweet food savory. Therefore I tried it as more of a sweet alternative like oatmeal as an example typically you would put sugar or brown sugar or something along those lines on your oatmeal along with a little bit of salt and let me tell you this spaghetti squash with a little bit of sugar or Xylitol and some butter oh my goodness it is fantastic. I haven't given up on the Italian dishes utilizing the spaghetti squash but it is good as a sweet treat

    Great video, though I remember reading once that if you cut them horizontal and create rings, you get more of the "spaghetti" part out. Have you ever tried it that way?

    We make spaghetti squash meatloaf. I cut the spaghetti squash lengthwise and then put my turkey meatloaf in the bowl part of the squash and let it cook in the oven. The juice from the meatloaf soaks into the spaghetti squash and flavors it. You don't want to use a meat that has a high fat content as the squash would get too soggy. For serving, we cut a slice of it and serve it. At the table, the individuals pull the squash skin off and flake it out into the spaghetti like parts. It is always a hit with my father in law, who lives with us, and my kids (8 and 11).

    I came on here because I didn't know what spaghetti squash was as I don't think they sell it here in Cyprus, we grow butternut squash here and that's all I've ever seen and weird shaped pumpkin squash in winter. I'm going to search for this in the city though as its looks so versatile

    I had spaghetti squash for the first time last night. Those things are TOUGH to cut, lol. But it was really worth it once it was done. I was surprised at how absolutely delicious it was, and it’s versatile. I had it with red pasta sauce but it would go well with a creamy white sauce or just plain with some seasoning and olive oil.

    fun trick... if you cut the squash width wise instead of length, you get longer strands. harder for microwave use though. also, i read this can be cooked then frozen for winter meals... but i havnt tried that yet.

    Even if I make it in the microwave, I drizzle and stir in olive oil, salt and pepper over the cooked strands. I also mix in some chopped parsley. I found that it tastes more like actual spaghetti pasta that way...

    I have one that was the last one in the store. it's white with only traces of yellow. I think it's not ripe so I googled how to ripen them. Supposedly putting them in the sun helps so I am riding around with a 3lb spaghetti squash on the dash of our truck. Good times... lol

      NO!!! No lights! Mine from my garden weren’t ripe so i just let them on the countertop! I bought a ripe butternut squash and put it with them and the riping process was so faster!

    Thanks for this!!! I'm going back to counting WW points plus...and loosing that sugar weight I've put on recently. I wonder if cooking the spaghetti squash in microwave then re-roasting the strands on a backing sheet, with some oil and spices will make the squash strands caramelize a bit?

    Use a basting brush to spread the olive oil on your squash before baking.

    If you cut the squash cross wise rather than along the long axis you'll get longer strands. This is possibly my favorite squash!

    i like to scoop the innards out (post-bake) and then fill the rinds back up with marinara and some cheeses, make a lasagna out of it :-) thanks for the video, by the way, i just happen to have one of these on my counter and you saved me a google trip!
