I just made this for a Lenten meal. I did everything as you did (including the way you cut the stem off. I also had added Mrs. Dash to the salt and pepper. Then, after shredding I added Kalamata olivedsand a generous amount of grated Parmesan cheese. It was deliciousi!
When I do this, I cut both ends off (the stem and the base) by just a little bit. Then you have a flat surface… just stand it up and cut straight down with a long enough blade. Takes a few seconds and you won’t risk hurting yourself. I also salt the squash about 20 mins to draw moisture out of it before cooking, using oil or seasoning completely. Just dab with a paper towel to remove excess moisture.
Yes, you can roast squash seeds and eat them as a snack or salad topper. Squash seeds from hard squashes like butternut, acorn, and spaghetti can be roasted in the same way as pumpkin seeds. They are nutritious and full of protein, omega-3 fatty acids, vitamin C, and beta-carotene

If the innards come out a bit crunchy and underdone - you can boil them in water just like pasta and they'll soften right up!
