How to hang the best ribs on the WSM

  • Hey y’all, welcome back to Pickles BBQ. I’ve had a Weber Smokey Mountain for more years than it can count.
    With the current craze for barrel smokers, I was envious. It turns out, you can have both worlds. In a less than genius moment, and inspired by other people, I realized the WSM is a barrel smoker.
    Anyhow, here’s how I decided not to get another smoker and use my current one.

    Disclaimer:
    I own two st Bernard’s and a cat, none of them were harmed in the filming, in fact, they didn’t want to come outside...it was hot.
    They did however get riblets.
    There may or may not be pork products in this video. (I’m pretty sure there are)
    I’m not a professional chef, I just know not to run with scissors

    I hang meat on my 22.5" WSM, often for large (80+ people) cooks. You've probably already figured this out, but my experience:
    1) Limit the fuel (charcoal) to less in a smaller diameter (much easier temp mgmt). I use a vortex 'upside down' (larger diameter up).
    2) Use a circular offset hanging ring along the WSM rim. Hunsaker makes the best product I've found, huge capacity, SS, real quality.
    3) Use the door to add fuel/wood as needed - I'll run ~3 hours initially before needing to add a bit for a 4-5 hour cook.
    Smaller event 2 weekends ago (60 people), so tons of room other than the 10 tri tips on the WSM. If this sounds like how street vendors in Thailand produce incredible quantities of smoked meats in simple drums, well it is, which led me in this direction. Have fun!

      Love this comment! The vortex upside down is a clever one, I made my poortex out of a stainless steel bowl from Walmart that I angle grinded the bottom off of.
      Depends on how much I’m around to limit the fuel, one of the cool things about wsms are that they work as set it and forget it smokers. But that’s a great point I’ve also cooked with them in competitions.
      I’ve hung a lot of racks off the gateway but also seen the hunsacker and it’s definitely cool too!
      One of these days if I’m lucky I’ll get to Thailand, would love to go there as well as so many other places!

    Pickles hey Brother. I’m doing some modifications and I’m going to need one of them racks. I have a company that I’m talking to right now that I may be able to get them, however if I can’t I will 100% get one from your link. You were the right video at the right time. Thanks for sharing

      Chip's Outdoor Channel I can only say the WSM is a barrel, and this is the equalizer. I have no idea on the difference though, never tasted or cooked ona pbc. Heck if I know but it was amazingly good. Thanks bud.

      Yeah, it worked out well! I don't have the WSM, but I'd say the result is fairly similar for all intents and purposes. They both are very versatile! I'm kinda itching to make a brisket or some jalapeno poppers next. I dunno. At any rate, I enjoyed watching your video! Looking forward to seeing your next cook!

      cooking with webby That’s what I was saying yesterday on your unboxing. Those are the two things I’ve found lacking. Pricy for a bit of wire, but man, so good.

    Try this when you want to remove the ribs. I did it with the h frame in the BHS and it works. Put on a hot glove that will guard your hand from the heat, then lift the entire rack out and over to a large pan and lay them all down at the same time. It can be done. Your ribs turned out very nice Pickles. Great cook.

    I have the exact same rib hanging kit. Halfway through the rib cook I hang the ribs from the other end. No burnt ends on them.

    Those were some beautiful ribs! I like that custom hook hook grabber contraption you created! Lol that's something I would have done! I have one of those cajun bandit doors on my WSM and it is so much better then the original. Thanks for sharing the video.

      @@PicklesBBQandCooking hey brotha, I got one of those gateway rib hanging kits and I'm planning on using it Monday(birthday present from my wife and kids) and I'm so excited! I have 3 racks of spare ribs, planning on using G'Ques the rub, and putting some sauce on one rack for the wife. The kids and I like them dry. I think I may wrap them so they dont get to dark or charred. I will be shooting for 250ish degrees. I've never hung meat so I was curious what you thought about my maiden voyage plans? Anything I need to change?

      Rusty KC I love that kit and hanging em does give it a real nice flavor. I have wrapped mine when the bark was set, they cook a lot quicker than normal water pan so keep an eye on them. Then take em out sauce em up and put them back on for a few so the sauce sets.
      Let me know how it goes brother! It might take a cook or two to figure out, but I like mine.

    Can you use this rack system if you added the lid hinge? Will there be enough clearance to close the lid?

      OriginalHawk Yep absolutely, it fits just underneath and works great. I’d highly recommend getting one, hanging ribs, chicken, you name it, works like a charm!

      Easy Bake BBQ I’ll tell you, I’ve had mine for a long(long) time. I wouldn’t trade it for anything. And with that hanging kit, look out world! :)

      So you got the 30 gal kit for your 18" WSM. Do you know if the 55 gal works on the 22" WSM?

      Easy Bake BBQ Yeah it should. Turns out the WSM is just a barrel. So yeah people were sayin the 50 gal works fine for a 22, I wasn’t sure on the 18,5 but sure did work. Plus target sells the 50 gal one online I think.

    Oh yeah!!!! I'm really on the fence between getting a gateway drum or just adding the hanging kit to my WSM. Hung ribs have such great flavor from the juices vaporizing. Not to mention you can fit a ton of racks when you hang them!

      TheKettleCookers Mike, I would highly recommend the hanging kit, the wsm IS a barrel cooker. It's inexpensive and you're 100% right about the taste space for ribs. Definitely get one! I use mine a lot.

      I bought the Gateway hanging kit and have used it once for 4 racks of St. Louis ribs and once for 2 chicken halves, both cooked in half the time. I’m absolutely thrilled with it. Tastes so different over open flames.

      BluzGuitar Guy Fishing Antics Hah, I’ll tell you that’s the first time I used it. I was doing the sides video at the same time. It was one heck of a train wreck. That hanger works real well, and the WSM kept on. It was fun and man were they good.

    Those ribs came out great. The hanger worked great too.
    I kind of thought the other way around. I built my UDS since the wsm is rather expensive here, but then by using a waterpan it kind of works the same :) i also have a mini wsm that i built froma smokey you, which would be a14inch wsm equivalent, so i think i am set :)
    Bit unfortunately i cant use the racks since i dont have a dome lid, instead i use a weber gbs grate and hang through the whole in the middle :)

    This method is very popular.....you can really load up the cooker with a lot of meat. You get the juices dripping....vaporizing...and then coming up and coating the
    meat with that added layer of a char flavor. Very Tasty style of Que! Since you are not using a deflector or water pan....You have to be careful with using rubs with sugar in them.......They Will Burn! Like your choice of spritz......good call. The Cajun Bandit stuff is the way to go.......all Stainless and built to last! \m/

      Heavy Metal Bar-B-Que Man no kidding. The Weber door is junk but lasted me a good really long time. I’ll tell ya though that rack really does make a difference. I didn’t think it would be so much but dang it’s good. Seriously thanks for the info brother. I’m just having fun as always.

      I'm with Ya'! With the help of Cajun Bandit accessories and the Weber hanging rack.......I hang in the Weber Kettle and the WSM. Hope You check them out! There are a lot of possibilities out there......hope You keep trying them. I'll be watching! Metal On! \m/

      I was thinking the same thing. I already have a WSM which I love. Never had anything from a PBC. But the WSM IS a barrel cooker. With this I’m sold. Still wouldn’t mind to cook on one, but man it was good.
