    Well thought out list of grouses - though I don't stay in the US or am familiar with Indian Restaurants there. A thought which struck me while you spoke about the Indian-Pakistani-Nepali combo restaurants is that India itself has a variety of different cuisines (some of which are vastly different from the others). It may therefore be prudent to deal with cuisines which are similar when planning a menu. In India, for example, you would rarely find a good restaurant serving both North and South Indian cuisine

      Yes, it's tough to maintain quality and nuance if I'm ,making 30 different dishes.

    As a guy who has traveled extensively and cooked some Indian food, I think "Indian food" is quite non-descriptive. India has many different cultures and regions with their own cuisine and language. What we know as Indian food here in the West is primarily North Indian/Punjabi. The Indian restaurant I used to visit sold a few naan, chicken/lamb/paneer Kadai, Butter Paneer/chicken, Chana Masala, Palak Paneer and a few tandoori and rice dishes. Small menu, but amazing food. It was hard to get a seat there.

      Totally. I am from Kolkata and I struggle to find Bengali food here (West Coast). That's one of the main reasons I started my pop up restaurant. There are many solid restaurants, of course, but the average Indian restaurant is only okay.

      @@dutthouse I agree with you. Very many restaurants here in Norway are not up to par. I think some places also cut corners to keep the cost down and profit high. I'd rather go to a place with 5 Amazing dishes on the menu, full of spice, love and representative of Mother India than a place serving 30 items that taste all the same. Doesn't matter if it's Item number 1,7 or 24.

      100%. I couldn't agree with you more. Time is such an important ingredient in creating depth of flavor in these dishes. Often, I can taste the raw flavor of the ginger and garlic pastes and the spices because they haven't been cooked out. I strongly believe that if you don't love the process of cooking, it's reflected in the finished dish.

    i love indian food! ive made my own paneer for matar paneer and I've made chana masala before!!! its a laber of love, letting everything cook and the flavors mingle and marry! its so worth it!

    Nice Bottle collections there..
    DO have ISLAY Single malts and AMRUT FUSIONS and AUSSIE REDS for any curry or grill lamb / chicken from NORTH INDIA
    Sasriakal.. I LOVE Sunil DUTT and Sanjay DUTT...

      Thank you! It took a while to put together. My husband loves to make cocktails. Thanks for the great ideas on the pairings for North Indian dishes, I'll add them to my collection.
      Haha I am from Kolkata so I'm the other kind of Dutt.

    Just found your channel 🙏
    One of my biggest gripes with Indian restaurants is the way items are offered on the menu.
    Sure, maybe it works with a group to order several dishes 'family style', but if I'm alone or with one other, I won't order dhal as an entree!
    Why do Indian restaurants offer side dishes as entrees!?
    It's rare, but i appreciate places that offer a thali style where one can choose their own curry, vegetable dish, raita, kachumber, etc.
    Oh and complimentary papadam and pickles would also be a nice change. 😉

      Right! There's no distinction between entrees and side dishes which I find strange as well! It's tough to find restaurants with thalis. I know there are some in Jersey City but I'm yet to visit them. I miss these aspects that I took for granted when I lived in India.

    Please show MARATHI Cuisine, Gujju CUISINE, West Bengal and SOUTH INDIAN Cuisine too.. My akka dhidhi lives in SAN JOSE Santa CLARA from 2002...
    I am an AUSTRALIAN Tamil South Indian who lived in Melbourne, VICTORIA - 2007 to 2019.. The Euro and Western immigrants for generations think INdia based on the Capital and HINDI Language.
    North India - Bollywood- Hindi- Punjabi CUISINE is not the Western World Thinks...
    This is not the only INDIAN FOOD here... 1 cuisine for the western world...
    Whatever you had the western known North Indian Punjabi Cuisine.. There are lots in California and New York- South Indian Cuisine.. Please do try South Indian cuisine in the US
    India has Hindi.. its spoken mostly in North India.. Bollywood is only known for any Indian movie.. RRR movie is from South India.- Telugu State.
    Lot of Tamil and Telugu Migrants for generations in the US
    We got 22 languages with 24 dialects in 22 states from North to South India.
    India is Unity in Diversity..

      So many great insights in this comment, thank you for sharing! I love the food and culture of South India and I'd love to showcase it. I am from Kolkata and lived in Delhi for many years so I know Bengali and North Indian cuisine best but I am learning more about South Indian cuisine and will share what I learn in the future.
