The seeds make tasty sprouts. Put the dried seed head into a bag and shake and that will shake out a lot of seeds while leaving the burrs on the plant. I have some going now. Nice to see some greenery while the grounds still blanketed in snow.
I've never eaten the stems, only the roots. I'll double /treble check then try a tiny piece and slowly up the amount. I have to say, the first time I tried burdock I boiled it and it wasn't tasty at all. The next time was years later, after swimming underwater for a while in a cold river. When i came out I was chilled, so I made a big fire on the sandy riverbank, I hadn't brought any food with me, but I uprooted some burdock which was very easy in the loose sand. I poked away some of my fire and put the roots in the hot sand, covered them with about 2-3 inches of sand then used a branch to poke the fire over the sand, after about 13-30 mins ( Sorry, can't remember, it was 9-odd years ago) I poked out the burdock root and they were delicious, like a sweet potato.
Try making japanese salad with the root and carrots, it's delicious 😋 It's valued greatly in Japan because of its properties, antioxidants, cleansing, etc. Don't eat if if you're pregnant though :)
I think I am growing these I tried forever with no success... I thought my elephant ears got frisky with a violet or something.. 😂 but the more i look the more I wonder.. I tried to dig it up.. and Got a branch of the root... will it grow back?
Thanks. Early-ish in the spring is best. When the leaves are fairly small. Once it starts putting it's energy into producing flowers the root becomes tough and woody
My favourite way is to slice it really thin on a mandolin, fry it in hot oil or butter and season. I use it as a replacement for potato. Apparently it's used a lot in Japanese cuisine which I'm going to look into
