Princess Isabel's son only ate the legs of the chicken, then one day they ran out of chicken legs, so the cook made some leg shaped dough filled with other chicken parts. The family liked it so much that they asked the chef to reproduce it. The coxinha became popular again only in the 50's in São Paulo, chicken legs were distributed to factory workers during lunch, but there was a need for something cheaper and more durable, then the modern version of the coxinha was born :)

Here in Brazil you can easily find coxinhas that are filled with just the chicken (I actually prefer it). - You can make things easier by making the dough with no milk and no broth. Just the water/flour with some butter and salt will work. - We also add some tomato purée to the filling, to give it a nice color.
