    Not really the way we do it, but close! Dough and shape are perfect, but the filling is usually only chicken with chicken broth, a bit of tomato sauce and occasionally some parsley.
    A little story: Coxinha was invented in the 19th century (Empire of Brazil). Princess Isabel's son only ate the legs of the chicken, then one day they ran out of chicken legs, so the cook made some leg shaped dough filled with other chicken parts. The family liked it so much that they asked the chef to reproduce it.
    The coxinha became popular again only in the 50's in São Paulo, chicken legs were distributed to factory workers during lunch, but there was a need for something cheaper and more durable, then the modern version of the coxinha was born :)

    So proud to see "coxinha" being spread around the world. We normally don't use cream cheese, we use "requeijão". But I imagine it must be difficult to find requeijão in a supermarket in the USA, so, cream cheese is the closest option.

    • @britton6062

      Maybe it's macarpone cheese ?

    • @lordbotato7175
      @lordbotato7175 10 місяців тому +1

      @@britton6062 No, it's quite different. It's almost like a mix of cream cheese and ricotta. I'd say cream cheese is indeed the closest thing to requeijão you can find in America.

    A few differences from the standard Brazilian coxinha:
    - Instead of cream cheese, we use a cheesy spread called "catupiry" which is similar but with a more biting taste. It's also not mandatory. Here in Brazil you can easily find coxinhas that are filled with just the chicken (I actually prefer it).
    - You can make things easier by making the dough with no milk and no broth. Just the water/flour with some butter and salt will work.
    - We also add some tomato purée to the filling, to give it a nice color.
