Taste of the World ~ Pastitsio (Greek Lasagna)

  • Yamas! This week, I am making a Greek dish called Pastitsio (pronounced pas-tee-tchio). It is considered to be a Greek lasagna. With the béchamel topping, it is sinfully delicious and pretty easy to make! Take a look to also discover how French cuisine plays a role in this classic dish. Recipe link and observations below.

    For the pasta, you can also use penne. It looks as though, as long as it is a solid pasta to hold its shape, you should be fine to use any pasta.
    Instead of wine, you could use beef or vegetable stock.
    Instead of beef, you could use a mix of ground beef and pork. Would also be great with ground lamb or, if you wanted to make it vegetarian, you could use a plant based meat alternative.
    When incorporating eggs to a hot liquid, I always temper the eggs prior to adding. I mix in a bit of the hot liquid into the egg (whole, yolk or white). I don’t want scrambled eggs.
    Instead of using a whisk to add cheese to the sauce, I recommend using a spatula or spoon (wood or other). I learned the hard way, the melted cheese gets caught in the whisk strands and makes a lumpy mess.
    The recipe is easy to follow (link below), but was unclear how much clove to add. I added about 1 teaspoon.

      Thanks! With the channel's "mission" of discovering and celebrating the foods of the Francophonie, I never would have thought I'd prepare Greek food. I was so excited to discover that Greece is part of the OIF! Love Greece!

    Wear ski goggles when cutting onions. Looks corny and something out of a British comedy show, but it works! It is also helpful when working with hot peppers (habanero, etc.) Merci pour la recette !

    Moisten the knife between cuts on the onion - Not sure why but it cuts down the irritants.

      Thanks! I'll give that a try. I wonder if it's because it cleans off the "acid" of the onion?🤷‍♀️
