This is a on a slightly larger scale than my plum drying operation, which involves about a kilo of fruit at a time, a baking sheet and the front seat of my car on a hot sunny day😊
Proanthocyanidins (PACs) bind Lipopolysaccharide (LPS) thus preventing inflammation! Foods high in PACs include cinnamon, cocoa, tea, cranberries, blueberries, grapes, plums, apple skin, almond skin, hazelnut skin, black bean coats, ... Just another amazing component of plant-based foods.
I find this very intersting. I was eating this dried but very moist plums that has been converted to prunes, and i became interested to learn how it was processed and this video actually gave me a clue. Now, I know what I'm eating. Thanks for the video for it is helpful. :)
Assuming you have D'Agen plums (other types of plums won't work, you'll get a mold farm), you can place them on racks and dry in the oven at a low temperature (less than 175 F). You can try drying them at room temperature; however, it is not recommended. You can also buy an inexpensive fruit dehydrator too.
+Bakhtiyorkhon Turakhonov The surest way is to keep them refrigerated. If they are dried and not re-processed, they need to be kept in cool dry storage. Over time sugar crystals may form on the outside which have similar appearance to mold.
Hi, my name is Adrian, i'm from Romania. Dear author, can you help me with some kind of information, i'm looking for the same machines that you are used to prepare the plums before introducing them into the oven. Can i find all those machines in Europe ? Thank you in advance !
+Adrian Cecan Prune plums are harvested, washed and spread onto drying trays. I don’t know the names of the manufacturers but I believe the equipment to wash and spread the plums onto trays would be available in both France and Italy. It is simple equipment, a bath tub to wash the plums, an elevator conveyor to pull the plums from the bath, and an articulating arm conveyor to spread the plums onto trays.
@56wb56a The pits (or seeds) remain during the drying process. Dehydration is a method of preservation. When a plum is dried into a prune, it can be stored at ambient temperatures until it is prepared for eating. During the re-hydration process, prunes may be pitted. This process ensures quality.

In a sense you are right, you can’t squeeze juice out of a prune. The U.S. Food and Drug Administration defines it as a “water extract of dried prunes containing not less than 18.5% soluble solids extracted from dried prunes. Millions of people drink it every day for their health."
My whole life was a lie....i though prunes are different fruits....just found out today after i decided to search about prunes and videos about plums popped up.....what confused me more is, prunes are dried plums, yet why are the prunes i ate are so juicy? Dried fruits are supposed to be dried....why it's called dried plums when it's so juicy?
@TheErgic Nice complimant there, I feel the same way. Just lately I have been very interested in the process of how prunes are made and was searching for a video showing it. Like on this one tv show called "how its made". They show the weirdest things sometimes so I thought they could atleast show prunes, lol.
It's so cool to see a in depth process. My job is to mark the stacks once they come out before they are dried. It's so fun with the crew I'm on.
It’s nice that you are enjoying your work and your crew. Dehydration is a great way to preserve some foods, like prunes. Thanks for your comment!

Front seat?… that’s where my bread dough rises. Lol
Pulled many a ton of dried prunes out of the drying bays at the Sunsweet plant in Coring CA during my college summers.

I have just picked about 10kilos of my tree. They are in Fruit tray boxes at the moment . Will they dry out naturally in a warm room ?

I too, would like to know, at what point is the pit removed?
