Awesome as always, one thing I really enjoy that you add to your videos is what you would have done differently or what you would add. Kinda tired of seeing the same ole, “These are perfect, Delicious!” It’s very refreshing to see you talk about what went wrong even if it’s as small as, I added alittle to much salt. I feel way more apt to try following your cooks because of that. Keep it up
Great video Drew - could I keep the belly whole for the cook (rather that cube before) and cube after ? Hope you will do the Windy City Shoulder Clod over direct heat for french dip sandwiches - keep the direct heat series videos rolling! Ted
You could certainly do it that way and still get fantastic results. I wanted the seasoning/mop to hit all sides of each cube so that’s why I went this route.
Drew , Syracuse NY here pretty much you but up here ( backyard enthusiast) your taking it another level making great content , cheers my guy!

Thanks! You could definitely leave it whole and cube after. I was going for flavor on all sides so I cubed it before.
very nice
Drew! Looking good. How come you didn't just leave it whole and cut up the cubes at the en?
