Due to its strong quality control and unique production method it’s one of the most expensive and unique cheese. Those wheels are approx 39kg and if used properly will make thousands of plates. Another thing, it doesn’t come hollow like this. The only sad thing is the chef is not trained properly and he is made a mess of it. The sauce is too much and watery so it has ruined the cheese flavour. Perhaps also ruined the next pasta that goes in due to leftovers. Hope it helps :)
