Tbh this coaster is too realistic cause there’s no g force limit if it last 0.2 seconds or shorter so technically the air launch coaster is too realistic
No matter what path you take. Assuming perfect condition where all your potential energy (height difference) converts to kinetic energy (speed), you are always going to get the same maximum speed because you are working with the same height limits.
Check the speed after a vertical climb immediately after a straight down drop vs a spiral drop. If the sped at the top of a vertical rise is faster after a spiral drop than after a vertical drop then you could have something to work with. If the game makes spiral drops faster than vertical drops then it might be possible to stack pairs of spiral drops and vertical rises to increase the speed. If this works, see if you can crack 1,000 mph or cause an integer overflow.
Those test dummies are experiencing about 4 km/s of acceleration. Kilometers! What is the track made out of that it can handle those kinds of forces. If you assume that a coaster weighs 1 megagram(metric ton but megagram sounds cooler), that would be 4 million newton of force. I have not taken statics but I don't think there is a material that we know of that could handle that. The people would simply cease to exist. You could accelerate a 40 ton house at 100 m/s with that much force. That house could "run" a 100m dash in 1.3 seconds.

I remember on planet coaster part one I was successful with the larger spirals at making them go really fast and it was faster than straight down but the spirals needed a slight downward direction the whole time

I expect the speed is simply a limit of space so if you make the coaster _absolutely ridiculously_ long and descend at a shallow angle it might exceed the 270mph limit. make a launch coaster and set it at max world height set the target speed to 175 mph and extend the track until it hits it. then add track in a straight line across the map descending at a shallow angle until it hits the ground. in theory this should give it enough time to accelerate past 270 mph
next make a epic roller coaster that goes high in the air, deep underground, has fast sections and slow sections, and with the objective of being so long that 5 minutes could pass and the roller coaster is not finished.
I remember playing the roller coaster game ultimate ride years ago and in order for me to build up speed on that game i kept long straight aways and a curve to go back to the other side and kept going back and forth awhile.

I believe you go unconscious at 6G. These rides are very likely to kill people. I think the negative g means that it is going in the other direction
