INGREDIENTS
Dough1 2/3 cup all purpose flour
1/4 tsp salt
1/2 cup cold vegan butter
5 tbsp cold water
Filling
1 bell pepper, diced
1 cup frozen corn
1 can black beans (15.5 oz)
1/2 tsp garlic powder
1/2 ts onion powder
1/2 tsp chili powder
1/4 tsp red pepper flakes
1/4 tsp cumin
Dip
1/4 cup vegan sour cream
1 tbsp vegan ranch
1/2 cup vegan cheddar shreds
2-3 tbsp plant based milk

I made them twice now and my dough came out way better the second time. It wasn’t sticky at all and the texture once cooked was so amazing. I always just throw in whatever vegetables I have for the filling with some cheese. Amazing

yes you should you will love it!!
You can use a pasta machine, yes, or you can press balls of the dough in a tortilla press. (You have to use plastic to keep the press from sticking; I use a cut-apart freezer baggie.) Then you can press out the dough, open the press, fill the dough, fold it (with the aid of the plastic), seal, and you're ready to go! (I saw it on a Guy Fieri episode.) Delicious-looking filling recipe!

Vegan version of empanada
Are you freezing them after they're baked? If after they're baked will they crisp up again if you pop them back in the oven? Thanks for your time. 😊
I freeze them after they’re baked. You can freeze them before baking though too it’s all about preference and then continue on with the cooking process or if you plan on deep frying. But if you cook and then freeze putting them in the oven will definitely crisp them right back up :)
