Chef Max is an amazing person, a great chef, and funny too. We opened Majordomo Meat and Fish in Vegas and he was helping everyone with everything. I learned a lot from him before the quarantine.
I call that a street food type of dish, I just bought mine near my place and only took 10 minutes or less to get it done. One he made is more of a luxurious version and as he said, his grandma would probably nag at him like how expensive the produce he used hahahha
ireland014 hell if you just sub out the seafood with some pork belly and pork shanks I can this same dish being really delicious still. Maybe even some beef short rib
What you have to remember is that this probably cost 60 bucks to make but can feed 6 people. 10 bucks a person for a meal this size is approachable and you look like a boss. You could make this for less than going to a chain reataurant.
Jesus. The kind of money/calibre of food one must constantly be around to watch a piece of king crab fly off the counter and *not* have a mini heart attack.
No way you are getting king crab for 10 bucks a pound, king crab cost like 30 bucks a pound at minimum... If it's frozen I might believe it but if it's fresh you are paying 30 to 70 a pound depending on where you live
First of all I'm glad there was no skip out on the amount of seafood used lol. Secondly it's so true how dishes of food can remind you of family and bring back memories 😔 shit, my g that kinda made me emotional bro.
Malaysian dish NOICE...just so y'all know, we call this hokkien Mee in Kuala Lumpur, Malaysia. His recipe is a richer, but easier to prepare at home version of what we get in restaurants here. The dish doesn't usually contain so much expensive seafood, usually it just has shrimp, chicken, a sizeable amount of lard, crispy pork crackling bits and it's normally cooked in woks over those Chinese restaurant jet-engine stoves that gives the dish a unique smokey-seared flavour referred to, over here as "wok hei". Cool stuff!!
You are totally right that this is not how you cook Hokkien Mee, the utmost important thing is a super hot wok and the flash stir fry technique. The best KL hokkien Mee are cook by charcoal too.
@@soehairikatni2962 i wonder if his grandma is in the US too, though? He said she didn't have a large pot either, no implication that she was using a wok herself. Woks are pretty huge for the amount of food that's supposed to be cooked in them at a time.
Why not? David Chang, the founder and restaurateur himself is an American of Korean lineage. He does not care where his employees come from, so long as they can do what is required of them.

That sucks, in Brooklyn Chinatown fish markets you can find King crab and lobster(alive) for about $9.99/lb and $7.99/lb when they are on sale.... quite the big price difference.
The downside is that you do need to buy a whole king crab including the body... which comes out to be around 100 bucks per crab, but it's huge and I normally share it with my family.
I guessed so from your accent... Either Singapore or Malaysian 😅... Really, if you wanna know what's good to eat... Make sure you find a Malaysian friend... We would eat in high class restaurants and squat beside open drains as long as the food is great...
"Life's too short to eat with people you don't want to eat with" - Fantastic mantra 👌

Not fantastic, you can put "Lifes to short to" behind anything and make it a mantra -.-" get some quality Dirk

I love how sentimental he is about his grandma and how he knows she can do better. He’s very loving about this dish
That whisper at 7:11 😅. My man is making love to these noodles.
Super great teacher -- I love that he doesn't expect the viewer to have a cleaver, and he chose a dish that we could realistically make

As a kid whose family is from the Pacific coast, the amount of seafood in this dish is a dream
Hawai'i here to say this dish looks fuckin' mayjah 👀🤤
Correct, but poor choice of football team 😂
KTBFFH! Come on Chelsea!
@Sylvester Banini yessir
You have such a gentle and accessible way of explaining what seems like such an intimidating dish! So easy to follow and your passion shows
Expensive, but holy shit a recipe that the average person could reasonably make.
not if you get the crab etc your self.
