How To Make Momofuku's King Crab Noodles

- Max Ng, the executive chef of New York’s Momofuku Ssäm Bar, stopped by the MUNCHIES Test Kitchen to make his grandmother’s king crab noodle recipe. These Chinese longevity noodles are coated in a dark soy glaze, packed with veggies, and filled to the brim with shellfish, including lobster, king crab, and head-on shrimp.

Chef Max is an amazing person, a great chef, and funny too. We opened Majordomo Meat and Fish in Vegas and he was helping everyone with everything. I learned a lot from him before the quarantine.
This looks so comforting and family friendly.
Expensive, but holy shit a recipe that the average person could reasonably make.

I call that a street food type of dish, I just bought mine near my place and only took 10 minutes or less to get it done. One he made is more of a luxurious version and as he said, his grandma would probably nag at him like how expensive the produce he used hahahha
ireland014 hell if you just sub out the seafood with some pork belly and pork shanks I can this same dish being really delicious still. Maybe even some beef short rib
You can probably just use shrimp and clams to try to keep the cost down.
What you have to remember is that this probably cost 60 bucks to make but can feed 6 people. 10 bucks a person for a meal this size is approachable and you look like a boss. You could make this for less than going to a chain reataurant.
You have such a gentle and accessible way of explaining what seems like such an intimidating dish! So easy to follow and your passion shows

No way you are getting king crab for 10 bucks a pound, king crab cost like 30 bucks a pound at minimum... If it's frozen I might believe it but if it's fresh you are paying 30 to 70 a pound depending on where you live

He’s using gailan. The leaves are the best part, but the stems are very tender and very good as well. I wouldn’t substitute broccoli for gailan, I’d look for something with more of a bitterness to it like mustard greens, arugula (my favorite green), dandelion. Watercress would be cool. Sometimes the choice of veg in a recipe will alter it more than the choice of protein.

Malaysian dish NOICE...just so y'all know, we call this hokkien Mee in Kuala Lumpur, Malaysia. His recipe is a richer, but easier to prepare at home version of what we get in restaurants here. The dish doesn't usually contain so much expensive seafood, usually it just has shrimp, chicken, a sizeable amount of lard, crispy pork crackling bits and it's normally cooked in woks over those Chinese restaurant jet-engine stoves that gives the dish a unique smokey-seared flavour referred to, over here as "wok hei". Cool stuff!!
