    Theology undergraduate here. There’s a wonderful book called How we Got the Bible by Neil R. Lightfoot. It shows us how the manuscripts were all collected and deposited into the cannon we have today. Also, if you are interested in the historicity of those manuscripts, check out On the Reliability of the Old Testament by K.A. Kitchens and The Historical Reliability of the New Testament by Craig L. Bloomberg.

      One thing I never hear Christians, or people in general, are the books that are not included in the cannon. Where would I find reliable information on this?

    Study to show they self approved, Paul told Timothy to study the Old Testament which pointed to The seed of Abraham- Christ.

    You should read the Bible a little closer.
    When Jesus said "When Abraham was, I am" he used the same "I am" that God used at the burning bush. He was calling himself God. And that is backed up by the fact that the religious leaders cried blasphemy and wanted to kill him. If Jesus wasn't claiming to be God, there would have been no blasphemy.
    I another instance, Jesus heals a lame man and says "which is easier, to heal the lame or forgive sins?" he says this because only God can forgive sins. Jesus then goes on to say "get up and walk, your sins are forgiven". If only God can forgive sins, Jesus is claiming to be God by saying "your sins are forgiven".
    As a final example (but not exhaustive list), a Pharisee calls Jesus good. Jesus responds " why do you call me good? No one is good but God". He never denies he is good, nor that he is God. And that would have been a huge faux pas in Jewish culture. Only God is God, and to do anything but deny you were God was blasphemy. Jesus never denied it, which would have been blasphemy if not true and would have invalidated him as a religious leader.
    In all three examples, when viewed from the actual culture the Bible was written to, Jesus allowed himself to be equal to God and even used God's name. So to say Jesus never claimed to be God is patently false.

      He didn't say Jesus never claimed to be God. On the contrary, he acknowledged that He did.
