Are these claims true? I have grown and eaten these bananas much of my life. The store bought cavendish bananas give me heartburn if I eat them with dinner. Burro bananas I can eat anytime. My favorite is to fry the green ones in lard. They have a slight lime flavor too. The bananas may be part of the reason I am over 50 with no gray hair or any health problems.
Yes, they can be difficult to peel while green in color. If too difficult to separate the peel from the fruit, it may possibly need more time to mature or ripen.

Yes you can freeze them. Before my Burro Bananas get too ripe, I peel them, slice them up into coins and freeze them in a ziplock type bag. Then I blend them in smoothies whenever I need them. I get maximum use from my Burros. Thanks for watching!
