Ramekin Size: 7oz
- 1/4 cup flour// 32g
- 1/4 tsp baking powder
- pinch of salt
- pinch of ground nutmeg
- 1/4 tsp ground cinnamon
- 2 tbsp dark brown sugar // 26g
- 3 tbsp milk// 40ml
- 1.5 tbsp vegetable oil // 15ml
- 1/4 tsp vanilla bean paste or extract
- 3 tbsp shredded carrot // 20g
frosting:
- 1 tbsp + 1 tsp softened cream cheese // 25g
- 1 tsp softened butter// 4g
- 1 tsp icing sugar
- a drop of vanilla bean paste or extract
**microwave for 80 to 100 seconds on the highest, 90 seconds is how long it took for me but every microwave is different so it may take longer or a bit less time for you. Keep a good eye on it and if it's not done, microwave for an additional 10 seconds.

whisk dry ingredients
1.5tbsp oil
3tbsp milk
1/4 tsp vanilla extract
whisk
3tbsp shredded carrot
transfer into microwavable dish
microwave for 80-100 sec
let cool for 15min
1bsp+1tsp softened cream cheese
1 tsp softened butter
1 tsp powdered sugar
few drops of vanilla extract
mix
put frosting on cooled cake
