Hey CJ, thanks for the tips. I just bought a pitboss vertical smoker and although I like it, it seems to be light on the smoke flavor. Question: do you think it’s a good idea to put the meat in for about an hour or so in the very beginning on the “smoke” mode then turn it up to the desired temp for the rest of the time?
