Binakol is an Aklanon dish. It is a Chicken soup based on sweet water of the young coconut (buko).
Ingredients:
1 kilo Whole Chicken (cut into small pieces)
100 grams Chicken Liver
3 Fresh Coconut (separate meat and water)
5 cups Coconut Water
5 cups Water
2 bundles Chili Leaves (trimmed)
2 bundles Moringa Leaves (trimmed)
2 medium Sayote (cubes)
2 medium White Onions (slice)
60 grams Ginger (slice)
2 pieces Green Chili
3 pieces Lemongrass Root
1/2 cup Fish Sauce
Ground Pepper
2 tbsp Cooking Oil

Tinolang Binakol na manok! I actually love this dish so much 😍 Nakalimutan ko na kung sang restaurant ko unang natikman ito. I think the name of the resto was "C2" or something (EDSA Shangri-la Plaza Mall, near Cinema level I think?). I'm not sure if the resto is still there, I haven't been in Shangri-la mall ever since Trinoma opened hahaha 😂🤣

Pag nagluluto ako ng binakol, ginagamit kong niyog or "butong" is yung medyo manipis ang laman, two reason kung bakit ko ito prefer na gamitin is because una, mabilis lang yang lumambot at no need mo na siyang pakuluan ng matagal, pwde mo siya ilagay sa huli kasama ng mga dahon-dahon na gulay,
Second reason is: mas maraming tubig ang niyog na manipis lang ang laman. Kaya di na ako naglalagay pa ng additional tubig.

that's what I thought y put in faucet water when coconut water is water itself. coconut water is matabang.pag hinaluan ng faucet water di lalong tatabang.anyway that being said I will still do this. thanku chef for sharing. you did really well.😘

No, we don't usually put salt sa binakol na manok. Patis is commonly used.
