Reynold Poernomo adalah peserta masterchef Australia yang berasal dari Indonesia yang juga merupakan adik dari juri masterchef Indonesia Arnold Poernomo.
Ia mengikuti ajang masterchef Australia season 12 edisi spesial yang bertajuk "back to win" yang berisi peserta-peserta top 12 dari season-season sebelumnya yang sudah sangat berpengalaman dan banyak yang telah membuka restorannya sendiri. Reynold sendiri sebelumnya merupakan peringkat 4 di season ke-7 yang setelahnya membuka dessert bar KOI di Sydney, Australia.

Interesting how he already knew exactly what he should have changed on his dish even before the judges said it
It should be quite obvious to a good cook. You always need balance in a dish, whether it is acidity and freshness to balance fattiness, sweetness to balance sourness, umami to balance saltiness or fattiness to balance a very light dish (lean meat or in this instance, a sponge cake). So he had to incorporate a creamy component to balance out the sour sauces and the airy sponge cake to bring a coating, velvety and round sensation to an otherwise lean and dynamic dessert. So he knew in hindsight (and thankfully so) that his sorbet wouldn't work that well.
A good chef is one who takes risks. Reynold pushes the boundaries all the time, and that is why he is a star.

I really dislike it when they have celebrity judges on cooking shows who have limited palates and little knowledge of food and ingredients. It doesn’t make sense and unfair to these hardworking chefs, whether they be amateurs or pros. I mean, it’s like having a celebrity judge on dancing or singing shows who have zero experience in that industry. It’s disrespectful.
When she said that she doesn´t really like white chocolate, Reynold should have said "You will after you tasted my desert."

I've never really cared all that much about Katy Perry and I thought she was being obnoxious in the first part of the video but she was quite right in her criticisms: sometimes less is more, and the sorbet didn't work all that well. This makes sense and Reynold himself came to the same conclusions on his own.
