That’s another way! I did not preplan my binding that way. However, keep in mind that having extra Minky on the sides can be a bit cumbersome while quilting on a domestic machine.
You would start at 12:28, after trimming your edges about 3/4 or 1 inch away (depending on how big of a binding you’d like) and sew it down on the front.

Why do you use a separate minky binding rather than just folding the back over the raw edge to the front?

You are supposed to use the markings on the ruler to measure, not the mat.
Her way seems to work just fine for her!
