    You are the only person who does the right thing by not spreading the candy. Spreading it breaks the air bubbles and makes it hard rather than light and crunchy. To break it up I pick up the whole slab, turn it over and hit it with a spoon to break into pieces.

    If you spray Pam in measuring cups it makes it so much easier for the corn syrup& other wet ingredients to come out! Also make sure you put butter on cookie sheet & keep it warm in oven. Have all ingredients ready to use and handy for cooking peanut brittle!

    Instead of stabbing it with the knife, flip the sheet pan over so it falls out and catch it with one hand. Now hold it in one hand and tap the back (very important) of the candy that was in the sheet pan with the handle of the knife. This will break it up, not destroy your sheet pans and create less fine brittle dust particles. I line my baking sheet with HD foil, butter that and then pour it in. This makes it easer to remove from the sheet and break up afterwards.

      Or, just hold the sheet pan and drop it on the counter once or twice.

    This is similar to sponge candy, so much better than rock hard brittle.

    Can peanut brittle be made without peanuts for us that cannot have the peanut but love the crunchy brittle

    I just go by the color and if the peanuts are almost done because it continues to cook and darken even when removed from heat and pouring out.

      You DON'T put cornstarch in brittle!
      You put BAKING SODA... not powder... Bicarbonate of SODA! Like Arm and Hammer ‼️👌🏻

      Most brittle recipes call for it. From what I understand it helps provide a smooth texture to hard candy. I hope that helps ya. 😊
