    My husband and I love cod and this looks perfect for us. Another favorite is tomatoes, but winter grocery store tomatoes are horrible. I think I will use canned diced tomatoes in place of the grated, but with the same ingredients and methods in the recipe. Cod and stewed tomatoes makes for a great light weeknight dinner.
    As I’ve said before, I’m not vegan, but these recipes have given me much inspiration for seafood and chicken. Can’t thank you enough.

    I made this for lunch right after seeing this video. It is delicious! I used Passata vs grating the tomatoes (fresh tomatoes too precious this time of year in Canada!). It was so nice for a light lunch.

    This looks so good. Simple straightforward ingredients, simple no nonsense food. I love saffron so much. I wonder if Spanish cooks use fennel with seafood like Italians do.

    looks wonderful! Love cod as you know that is what we have here in California and the Northwest of North America in abundance! I love it, plus we can always find it at a great deal compared to other fish. OHHH and anything with saffron, YUM!!!!! I'm so there! Thank you for sharing! I need some new seafood recipes!!!

    wow thank you I feel stupid lol. For the crispy bread coating, I have tried flour and egg before but I would always use them in the wrong order! Next I will try your way, first the flour then the egg! lol

    I think that salted cod is much tastier than fresh cod, it's like ham, cured is much better than fresh. There are many typical Spanish recipes that do not taste the same if they are made with fresh cod. In Spain, salted cod is much more expensive than fresh cod, certain slices such as loins are almost luxury items, especially if it has been cured on board the fishing boat and has a yellowish color. Now desalting cod is an art, if you don't desalt it well you can't eat it, but if you desalt it a lot, it doesn't taste like anything, although a little salt is better than not salting. The Portuguese and the Basques are the great masters of cooking cod

    I don't know if you have been affected by shortages of fresh ingredients after the bad weather in Spain? They are rationing tomatoes, peppers etc. in our supermarkets.

    Albert at 47 grams of fat and 7 grams saturated, it's a bit much. What is your recommendation for reducing this amount of fat? Can I flour and egg was the cod then cook it in the oven instead of all that oil? Thank you.

      I'm not sure how salt cod fries up. It's usually soaked and used in sauces or baked dishes, I think (might be wrong)

      @@LindaC616 It's usually soaked in water for a few days, changing the water a few times. Then cooked like fresh. It fries just fine. I asked because most Mediterranean countries did not have access to fresh cod until refrigeration became widespread.
