Grocery store ground beef tends to be perfect, idk what you're talking about needing wagyu.
It tends to be about 70 to 80% lean which is great for burgers. Just don't get something with gristle, but if you like cooking, you already know which supermarket gives you that

Understanding the Levels of Doneness for Hamburger Patties
Rare has an internal temperature of 125°F and is completely pink throughout the burger.
Medium-rare has an internal temperature of 135°F and is just slight brown inside near the crust of the burger.
Medium has an internal temperature of 145°F and a center that is slightly pink while the rest of the meat inside is brown
Well-done has an internal temperature of 160 °F and is completely browned throughout the inside.
The USDA recommends cooking ground beef to an internal temperature of 160 °F to ensure you’ve killed any harmful bacteria.

@@BlackPanther-yv7ib True, but as Hellen Rennie points out, more people die from riding bicycles than from eating medium rare burgers. 😃

for grilling, typically 450F+, if you're searing steaks the higher the better. I use Lump charcoal because it burns hotter compared to briquettes. in order to get those temps, open ALL dampers fully. more airflow, more heat. when cooking on Charcoal, it's typically a good idea to put the coals on 1 side. that's called 2 zone grilling. hot side / cool side. when using a charocal chimney, coals are generally ready to go in about 15 mins or so after being lit.

    • @CowboyCharcoal

Thats a great Q. Make sure to chill the meat before putting it on the grill. If it gets too warm, it's likely to break apart.
