Ka'ak al-Quds or Ka'ak ibsimsim A Middle Eastern Toasted Sesame DREAM..I mean Bread!

  • Hello welcome to my little culinary space here on youtube! Today we are getting down in the kitchen and delivering a Palestinian Middle Eastern toasted sesame bread called, Ka’k Al- Quds or Ka’k ibsimsim

    THE Ka’ik Al-Quds Recipe:
    Combine and let rest for 10-15mins or till it puffs up:
    1 cup water (warm, at room temp I warmed it in the microwave for 35 seconds)
    1 Tablespoon instant yeast (equivalent to 3 teaspoons)
    2 Tablespoons sugar
    While the yeast blooms combine the rest of the ingredients before adding it at the end.
    3 1/2 cups of WHITE BREAD FLOUR very important
    3 Tablespoons milk
    3 Tablespoons extra virgin olive oil df
    2 teaspoons salt
    1/4 cup plain yogurt (equivalent to 4 Tablespoons)
    Knead for 7-9 minutes. Rub olive oil on the dough (to prevent it from forming a skin and sticking to the bowl) and walls of the bowl before covering it and
    Letting the dough proof in warm place like an oven for 60-90mins or until doubled in size
    Prepare:
    bowl of cold water and
    a bowl of 3 cups of UNtoasted sesame seeds
    After the dough has double in size, punch it down till it is back to its’ original size and split in 2.
    Take one ball and roll it into a log the width of the tray, taking a serrated knife cut down the center to create a 0 oval or zero shape. It helps to bring the fingers to the center of the dough while cutting.
    Or roll the ball into a long log and join the two ends by rolling the joined ends once or twice under the palm of a hand.
    Once the oval or zero 0 shape has been achieved, hold the entire dough as evenly as possible and quickly dunk it in the cold water and let it drip for a second or two before putting the wet dough into the
    untoasted raw sesame seeds and covering the entire surface area. The sesame seeds will grab onto the dough until there isn’t a single spot on the dough that is showing. Take the dough out-gently and place it on the cookie tray
    where it will be shaped or guided back into the signature oval shape. Make sure there is a 1 inch space in the center so it doesnt bake into itself and not more than that or it’ll look like a ring from Jupiter.
    Preheat the oven to 475F
    Bake the bread for 15-20mins or until golden brown.
    If you used TOASTED sesame seeds instead, they will brown too much so lower the oven temperature to 420F and bake longer for about 25mins or until golden.
    Once they have come out of the oven spray them down generously with a spray bottle filled with fresh water. Spray each 20 times that once and let it cool completely.
    Once cool enough to handle rip open into the perfect sandwich bread FULLL of aromatic middle eastern flavors and memories I hold near and dear to my heart.
    To store it, put it in a bag or plastic wrap after completely cooled. Not hot or it will get gummy and attract bacteria.
    To reheat spray all around with water and pop back into a 350 degree oven for a few minutes till the water has evaporated and the bread is plush as a pillow.

    May Allah bless your uncle. The bread looks so good, hope you continue to make more videos. Beside watching how you making the bread, I can't deny that I feel so much love like I was in the memory too, what a beautiful stories. Actually I'm planning to celebrate my sister's birthday with middle eastern delicacies theme so thank you for the recipe! Hope it will make a good memory to my family members too.     BTW, olive oil is very expensive in our country also not enough available. If I wish to cook a bread it will cost more than $3. What then!

      Olive oil is very expensive here too, that’s why I save my best olive oil only for dipping with fresh bread so we can enjoy the pure flavor. A little goes along way when you use it with love and care. I don’t like to use it in cooking unless necessary because it’s precious and because it leaves a strong flavor in dishes that is often unnecessary

    ❤️ this AUTHENTIC recipe! We go to Palatine/Holy Lands every 2-3 years & your recipe is the best. Biting into this 🥖 is glorious... just close my eyes & I’m back there.     Thanks for the recipe. Here’s my tip for you: scrub your rings with toothpaste and a soft tooth brush. Don’t worry, the tooth brush will not scratch your diamonds.
    I think we’ve all had that terrible feeling of forgetting to take our rings off before the messy kneading process. ❤️

    My world you are talking too much for unnecessarily. Plus you are not saying how much what you put while you are making. After you kneed the dough you added more olive oil and God knows how much. For this reason thumbs down from me.
