Great video & concept
Damian Mandola runs those restaurants. Hes a founder of Carrabba's Italian Grill. Great recipes from his grandmother.
This is huge in many parts of the Midwest, was recently in St. Louis and KC and we went to 5 mid tear family restaurants and all of them had this model, order food at counter and drinks at the bar and find your own seats. No hostess or waiters. This is a direct result of laws being passed increasing minimum wages
Love it! It definitely helps with labor costs when it can be implemented.

Please do a video about what a GM position looks like for a restaurant without servers! I've witnessed several places where GMs are no longer what it used to be. They have more of like floor managers who are called GMs, but they are basically lead servers/bartenders with ability to close the register, provide basic customer service, take care of smaller parties, run to the store when necessary.
