Deadlift, clean and press, or snatch for the reasons Grant outlined. If I'm packing for the apocalypse, it's an adjustable KB or gymnastic rings tho.

I would choose the clean and press.

I really struggle with the deadlift. It comes up so slow, and I am so winded, that I need to rest about 15 to 30 seconds between each rep. My current weight is 360lbs, but my squat is 335lbs. Only a 25lb delta between the two lifts, when it should be wider. I just can't increase my deadlift by more than 5lbs, and it takes me a week to recover, so I'm deliberately incrementing my squat at a lower 2.5lb rate, at once per week, to raise my deadlift relative to my squat. Just a stupid mess really.
I think you're underestimating how well your doing.

I agree with that but I'm not very good at that so I'd go with bench press ALL THE WAY!

You won't even be taxing your pressing ability with that, because in order to lower the bar behind your head to set it on your shoulders and squat it, you'd have to significantly cut the weight on the bar.
The press can't leave the narrow groove and still be heavy enough to stimulate a strength adaptation.
If you don't have a squat rack, and only have a barbell and plates, then you should deadlift as heavy as you can, and then clean and press.
