    Niki Davis, MD is a “rocket scientist” turned physician. She is board certified in both family medicine and lifestyle medicine. At age 13, she started removing animal products from her diet because she didn’t feel it was healthy. Once in college, she obtained bachelor and master degrees in mechanical engineering and worked on the space shuttle program for several years. However, instead of having rockets on her mind, she was constantly thinking about health and nutrition - helping her own family members improve their health and their lives by switching to a plant based lifestyle. She eventually found her way back to her passion after leaving her engineering career to apply for medical school.
    She graduated from the University of Utah School of Medicine in 2017 and completed a Family Medicine residency program in 2020. While in residency, in addition to serving as Wellness Chief, she helped form Plant Based Montana, an advocacy group with the mission to educate healthcare providers and the general public about the benefits of a plant based diet. She has had the pleasure of speaking at plant based events around the country and has been lucky enough to train with phenomenal mentors such as Dr. John McDougall, Dr. Michael Klaper, Dr. Anthony Lim, and Dr. Alan Goldhamer, among others. She is a regular guest on Chef AJ’s UA-cam channel show and on the Physicians Committee for Responsible Medicine (PCRM) Podcast. She has a certificate in plant based nutrition from the T. Colin Campbell Center for Nutrition Studies through eCornell and is certified in The Starch Solution.
    She feels extremely grateful to be doing what she loves every day - helping people live their best lives.     Today Dr. Niki Davis will making oil-free corn chips, refried bean dip, and Pico de gallo. Perfect for a spring get together!
    The recipes:
    Oil-free corn tortilla chips:
    - Ingredients: 8” round corn tortillas (make sure they don’t have oil!)
    - Cut into 1/4 or 1/8’s and air fry at 375 deg for about 5-8 minutes until golden brown (to get that yummy crunch). WATCH them closely because they will burn easily! If baking in the oven, bake at 350 deg for about 8-10 minutes.
    - That’s it! Enjoy with your favorite salsa or dip.
    Oil-free refried bean dip (based on Vegan 8 recipe: ‘Vegan Refried Bean Dip’: thevegan8.com/vegan-refried-bean-dip/):
    - Ingredients:
    2 cans fat free refried beans (Trader Joe’s or Whole Foods 365 brand)
    1/2 - 3/4 cup salsa (I like Trader Joe’s Salsa Verde)
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp date sugar
    1/2 tsp salt (optional)
    - Mix all ingredients in a bowl (heat up in microwave or on stove-top or serve as-is!)
    - Top with a few pickled jalapeños if you want a little kick!
    Pico de gallo:
    - Ingredients:
    2 cups tomatoes, diced
    1/4 cup red onion, diced
    1/2 cup cilantro, chopped
    Juice of 1/2 lime
    1 avocado, peeled, pitted, and diced
    1/2 - 1 jalapeño, finely chopped (optional)
    1 mango, peeled and chopped (optional)
    - Add all ingredients to a bowl and mix!

    getting here late, but the only corn tortillas I use are the trader joes ones, which only have corn, water & lime. I found other brands to burn because of the chemicals in them., so I DO NOT RECOMMEND other cheap corn tortillas that have other ingredients other than water, corn and lime.
    I purchased my air fryer to cook two items, one french fries, and corn chips. make sure you cook your potatoes first, not to the point of mushy, but cooked all the way through, place them in the fridge to cool ( I cook mine with the skin) or you can do without skin.
    I then have a spray bottle of water, place my cut potatoes in air fryer then spray with water and add seasoning, air fry for 5 minutes, then check them mixed them up, spray some more water and add some more seasoning, air fry for 5 more minutes, check shake them up, air fry for a few more minutes until I get the level of crispiness I want.

    This is a nice video but corn 🌽 tortillas are made with GMO corn unless organic! Also beans out of a can are not very healthy yes you have no oils but the ingredients are not healthy im confused why would you post a non healthy snack like this 🤷🏻‍♀️😥😕😨😱😕😨

    It’s hard to find corn tortillas without oil in my area . So I get Eziekel wraps . Plus me n corn don’t agree 😢

    Adding salsa to the refried beans is a great idea. I make my own garlic powder from our organic home grown garlic. Easiest thing ever! Most store bought powders have anti clumping talcs added. Loved this demo. Thank you!!❤
