That looks delicious! I'm going to check out the tzatziki recipe for sure. I love that stuff and really miss a good vegan version. I've tried a few store-bought versions, but they weren't very good. Thanks so much for all you do! I might try this recipe with soy curls as well.
That to me is a healthy "chip butty"! I microwave potatoes for circa 10 minutes leave them to cool, cut them into "steak fry" size (I would call them "chunky chips" and then air-fry them to give colour and crispiness. I have only experienced gyros or donor kebab (we have Greek and Turkish communities here) where the pita is lightly toasted then split and the potatoes and salad etc are inserted in the "pocket" but otherwise it would be very similar. BTW "chip butties" are common in the UK where fries are placed between slices of "rubber bread" or in some regions where at the fish and chip shop they load a soft white bread roll (called a bap bun) with chips / fries deep fried (I make the twice cooked potatoes regularly as a replacement for fries)
Potatoes being one of the most satiating foods really helps with this dish, too!

You can also use a lid if you want the veggies to release some moisture while sautéing.

You might want to put a piece of shelf/cabinet liner under the cutting board to keep it from sliding.
