That's how you get hundreds of portions out at once. That doesn't work on a restaurant scale. Especially not a failing restaurant scale with those big batches last forever. However I'll definitely take that sort of misunderstanding over the people who delude themselves into thinking that they are masters after reading a single cookbook

The problem is that most of these resturants are charging a ton of money for these dishes that aren't that great. I'm sure Gordon wouldn't be as harsh if they were honest to the customers. Especially when most of the food comes from a freezer.
