WOW!!! YUM!!! Before You explained at the beginning of Your video that this soup originated from India; I was thinking that it was an Irish or Scottish recipe from it's name. Mulligatawny Soup. this looks so good. i'm making this this weekend, however i'm going to use yellow curry simmer sauce that comes in a jar. hopefully it'll turn out well.
You might want to try granny smith apples and give them enough time to cook down. I don't know if they are available in your region. I prefer the beef version myself. Add finely chopped or mince beef.
May I ask why you chose to tie the thyme up and take it out of the soup instead of just pluck the leaves off of it? Is it the Thyme leaves that turn black quickly?
It's just easier. Like a bouguet garni, it flavors the soup and then you remove it. If some of the leaves fall off into the soup, that's okay. Some cooks wrap the herbs in cheesecloth, which keeps the leaves out of the soup, if that's what is wanted.

For decades, I popped popcorn in a pressure cooker that was without a seal. They're great because they're so heavy.
