Guys, I did this same recipe, but instead of coconut oil, I used ghee, and instead of those chocolate chips I used bakers chocolate with stevia. So good!!!

Next time you make them try chilling the muffin liners first when you add the melted chocolate to the muffin liner pick it up and roll the chocolate around the outside of the muffin liner this should give you a little cup of chocolate that will make the bottom a little thinner and when you add the top layer of chocolate it will contain the peanut butter within the chocolate cup.
Sorry I meant the inner wall of the muffin or cupcake liner. So basically create a cup of chocolate inside the liner before adding the peanut butter. Hope that explains it better.
When I put the bottom layer of chocolate in i tilt the tray in all direction do get the sides half coated it creates a nice little pocket for the peanut butter and I used FATSO salted Caramel peanut butter so damn good

I used the same recipe but I don't freeze for 15 minutes I just put in Baker's Chocolate with Stevia Drops, then Smucker's Peanut Butter on top of that with more Stevia Drops, then more Chocolate mix into the freezer for 30 minutes to 1 hour done let's eat so good
I added about 5 table spoons of peanut butter, then mixed it with 1 teaspoon of swerve Confectioner Sugar and some pink sea salt, combined with Peanut butter and it's tasted just like the Reeses peanut butter inside the original peanut butter cups. Yummy 🙃
To make traditional copycat Reese's Cups you add confectioner's sugar to the peanut butter. I think if you add some Swerve Confectioner's sugar to your natural peanut butter it will make your centers more Reese's like and less runny as in your photo. I will try-just a suggestion.

It’s way easier to just dip 85% dark chocolate into sugar free peanut butter. Tastes the same to me and there’s no fake sugar at all. But maybe I’ll try this one day.
Can I make a suggestion...zero your bowl out and then pour in the entire bag of chips. This way you can divide it in half to make it even for your top and bottom. I put 150g on the bottom and was left with 107g for the top. Recipe is awesome, uses 1 whole bag of chips. Oh man they hit the spot!!! Thanks Joe

Walmart organic natural peanut butter actually has better macros than Smuckers. I just made some by mixing the PB with coconut flour and erythritol, and then mixing cocoa powder, coconut oil, PB, erythritol, stevia drops and a touch of salt for the chocolate sauce. They taste amazing, and don't require ridiculously expensive special chocolate chips.

I find Erythritol doesn’t break down and remains to make the item very gritty

Stevia is ok but monk fruit is even better and it is pretty easy to measure at a 1:1 ratio to sugar
