I have a sourdough starter that was given to my by my great grandma , she told me it was given to her by her mother. I have heard of starters that have been passed on longer than this. If you take care of them they can become a family heirloom. Also it was cool to see you colab with the king of random.
Sourdough waffles are amazing. Its something I have grown up with, and I've never seen it sold, just homemade. maybe try waffles instead of pancakes with this grain? could be great!

It's a mixed blessing: the content is better, but fewer people see it. Although I know you have a full life and job already so I don't blame you if you simply can't make any more time for the channel because of other priorities. In other words, don't buy a waterbed, but find a way to make one that is super sturdy and cat proof and me proof. I'm clumsy. It's gotta last me more than a week or so once I try to build one too. I'm really clumsy.
Haven't watched the vid so idk the context too much but no, sourdough isnt just different strain or anything like that. Sourdough has always been the way to make yeast since the ancient river civilizations. The yeast is collected via the yeast that's all around us and using sourdough starter actually gives the bread a different flavour and because of the slight acidity makes the bread last longer on the shelf. It has more effects but those are the 2 main reasons.
I loved seeing the grain close up. Have you had a chance to try the sourdough starter I sent? It originally came from Caleb Warnock. If you keep it happy, it's a very vigorous natural yeast. I keep it in my fridge and feed it about 2 times a week and put it right back in the fridge. I feed it and let it sit out on the counter loosely covered overnight the night before baking day. I use 1/2 cup starter for 2 loaves of bread.

I'm so sorry about that! It died. I was unable to revive it from the dehydrated flakes despite multiple tries. JB
