Yes you can! They are quite wet once canned or cooked, so you may need to reduce the other liquids in the recipe unless it specifically calls for canned or stewed plums :-)
How do you cold pack? Do I need to cook my plums or can I halve them, take the pit out, cover them in sugar, let then sit to create the syrup and then can them?

COld packing is canning code for putting them in the jar raw. What you describe should work perfectly!
i have jars with steel rings and silicon inners. are these canning jars
