Pure vanilla is made with the extract of beans from the vanilla plant. Mexican vanilla is frequently made with the extract of beans from the tonka tree, an entirely different plant that belongs to the pea family. Tonka bean extract contains coumarin. When it comes to taste the bean imparts a rich, slightly nutty vanilla flavour, with hints of sweet spice for added deliciousness.
Dipteryx odorata (commonly known as "cumaru", "kumaru", or "Brazilian teak") is a species of flowering tree in the pea family, Fabaceae. The tree is native to Northern South America[1] and is semi-deciduous.[2] Its seeds are known as tonka beans (sometimes tonkin beans or tonquin beans). They are black and wrinkled and have a smooth, brown interior. They have a strong fragrance similar to sweet woodruff due to their high content of coumarin.
The word tonka is taken from the Galibi (Carib) tongue spoken by natives of French Guiana; it also appears in Tupi, another language of the same region, as the name of the tree. The old genus name, Coumarouna, was formed from another Tupi name for tree, kumarú.
Many anticoagulant prescription drugs, such as warfarin, are based on 4-hydroxycoumarin, a chemical derivative of coumarin initially isolated from this bean. Coumarin, however, does not have anticoagulant properties.[
Tonka bean extract is classified as unsafe by the FDA, it has been illegal in the United States since 1954. What Kent is using is a pure Xochitl vanilla bean extract, likely at 35% alcohol which extracts more vanillin, resulting in a richer vanilla flavor. Vanilla originates in Mexico and Central America and evidence suggests it was the Totonacs of Eastern Mexico (Veracruz and Puebla) that first processed and extracted vanilla as a flavoring. The region continues to be a top vanilla bean and pure vanilla extract producer.
I use a Mexican vanilla extract as well, but it is certified vanilla. Vanilla is originally from the Americas, but has been spread to other countries, such as Madagascar and South East Asia. Most of the Vanilla used around the world is from Madagascar. It got to a point where vanilla from Mexico was not available, I hope it’s getting a better market opportunity. I’m using the Blue Cattle Truck trading Company. I hope it’s still available because I’m almost out of it.
I just searched Amazon, and it is available, but at $45 a bottle. I’ll check my local co-op tomorrow.

Chilli in chocolate is highly underrated - the _best_ chocolate ice cream I've ever had was a red and black pepper chocolate - this cake looks amazing!
You should try mexican mole, some types of mole are made with chocolate + chili (a lot of types of these) and spices.

I love the chocolaty and smoky aroma of dried ancho chili, too. And chilies do add something special to chocolate _anything!_ On Christmas, my niece gifted me with a hot cocoa mix with a spicier variety of chili mixed in, and it sure has warmed me up during the often sub-zero Vermont winter.

Been trying to stay out of sweets lately, but that thing looks delicious! Thanks for showing us. Reminds me of a giant Little Debbie's fudge round. My sister used to make some Georgia Mud Fudge Cake. It was so sweet, you'd get cavities just smelling it.
We had a big thing of mexican vanilla as a teenager….so yummy! Almost had a hint of cinnamon flavor.

Dear Cookie, I see how hard you work and how long it takes for you to make these sumptuous meals - complete with dessert! At one time in the past I successfully made blackberry cobbler with fresh picked wild blackberries on a Coleman camp stove, I did. I was the camp ground hero that night. My most fervent wish is that you get some off time to hike through those beautiful outdoor wildernesses with your beautiful wife and ever loving pup squad or at least an hour or two to go fishin'. More than most, you deserve it, you do.
About 45 years ago I baked a chocolate cake on TOP of a gas stove. I used a dutch oven on the top, put a pan (like a trivot) on the bottom of the dutch oven. The cake pan sat on top of that. I preheated the whole thing and turned down the heat when I put the cake batter in. Turned out pretty good. Was out camping at the time. We weren't allowed campfires.
I wish I had a man like you in my life. You are funnyman and you are a great cook.

Finally got around to making this cake. It is great! The ancho chili is subtle and works well. I did make a 2/3rds recipe as we only have two cake pans and only two of us. It worked great! Thanks for the recipe.

Whenever I make chocolate desserts like cake or brownies, I always add a little bit of espresso powder. It doesn't end up tasting like coffee, but it makes the chocolate taste richer and deeper.

I learned to cook in a Dutchoven using briquettes and how to figure what your oven’s internal temperature was by the amount briquettes and arrangement of them by the size of the oven being used. Last couple of years I’ve been using the chunk charcoal and liked it when grilling, slow cooking, and smoking. My first attempt at using a dutchoven, I built a fire and let it die back, then used the coals to cook a batch of biscuits in a 10” oven. I put my oven on a good bed of coals and shoveled a good load of them on top. They were biscuits in five minutes and briquettes in ten, needless to say, I fixed up another batch and they were delicious. Within a week I found a blackpot club, joined and learned the art of cooking in a cast iron pot. In the 80s I
