I appreciate how he stressed slow cooker safety. It's probably OK to do this recipe without preheating but I'd be very careful with raw meat. One year my dear MIL nearly killed us (kidding, mostly). She made an additional 'special' dish for Christmas she thought we'd like-sweet and sour chicken. It wasn't until after DH and I ate it that she said how she did it. She put frozen raw chicken breasts in the crockpot with jarred sweet and sour 'simmer' sauce and left it on low all day. You're supposed to stir fry the chicken until cooked through and add the sauce on the stovetop. DH and I spent the next two days, well, you can guess. I always bring food up to temp before in goes in the slow cooker.

Looks delicious and seems WAY easier than how I make my potato soup. Will definately have to try this one out. The new slow cookers nowadays cook at a way hotter temperature than the old school ones did. Thank you for keeping Steve "Shotgun Red's" legacy alive for us.

I love chunks of potato in my potato soup.
My mother used to make the best (im now 62 lol) my wife makes it with shredded potatoes like her mom made it. Unfortunately i haven't had potato soup for a long time lol

I am trying this recipe today. It is really easy. No sure of your apprehension of crock pots? Everything in this recipe is pre cooked pretty much or doesn't really spoil except for the milk or cream cheese? I thru everything in my crock, put it on high for 1 hour, everything was pretty much melted, stirred and have been cooking it on low all day which according to my Instant Read Thermometer is about 203-205 degrees on low. It is simmering. I am waiting to put the cheese in until the afternoon a few hours before I am ready to eat it. Same for milk and philly cream cheese. So far it tastes great.

@@CookingwithShotgunRed Thanks, it is looking very good. But I have one question. When I put the cream cheese in, I divided it up into cubes thinking it would melt quicker but the cream cheese in some cases stayed a small cube and I had to use my spoon to keep smashing it and breaking it up. Is that expected? Did you have that problem? I used a Publix brand cream cheese.
