    Recipe
    450g bread flour
    10g salt
    320g water
    150g sourdough starter
    Steps:
    Preparing your starter-
    1.Feed your starter. 25g starter, 100g flour, 100g water
    2.Let sit over night
    3.Verify thats it’s bubbly and active
    Preparing your dough-
    1.Add sourdough starter and water and mix
    2.add flour and salt and then mix completely
    3.Let dough rest 1 hour
    4.Perform 1st stretch and fold
    5.Let dough rest 30 min
    6.Stretch and fold
    7.Rest 30 min
    8.3rd and final stretch and fold
    9.Let dough rest until doubled in size.(3-12 hours)
    10.Shape dough, place in basket, and let ferment in fridge overnight.
    11.The next day, preheat oven to 450F(230C) with dutch oven inside
    12.Once preheated, score dough and place in dutch oven with lid on.
    13.Bake for 20 min
    14.Lower temp to 400F(205C) and remove lid.
    15.Bake for another 40 minutes.
    16.Remove from oven and allow bread to cool on a rack for at least an hour.

    My wife deserves all the credit for this one. She is so much better at stretch and folds and shaping than I am so I made sure to spotlight her technique!

    Thank you for sharing! I love sourdough bread; I did not realize the process was this 'technical'. Step 1: Have patience; a lot of it!

      Yes, absolutely! Most of the steps really don’t take too much time. The hardest parts for me to figure out were the stretch and folds and shaping. Some people flour the dough to make it a bit easier when shaping. You can do it though!

    When I make sourdough, I use 1 cup of water, I cup of sourdough starter, 3 cups of flour and 1 teaspoon of salt. I wanted a recipe I didn’t have to weigh, and this one works out great for me every time.

      I have yet to try measuring by volume. I’m glad you found a recipe that works well.

    Im going to try this recipe today! The whole reason I started sourdough is to make the bread and have failed at it everytime I make it. I’m successful at pancakes, cookies and biscuits, but not bread just yet. I hope I do it right this time!

      That’s awesome! We use more starter and a higher hydration than most starter recipes. I feel as though it has made it easier to get a good rise and an open, airy crumb. Best of luck!

      Sourdough is so fun to use, I especially like it because of all of the health benefits from it.
