5:30 min: Here we have a second misconception about medieval sieges, Nate. 6 months of siege did not mean 6 months of continuous fighting, but mainly waiting and hoping that the besieged would give up before the service obligation of the participants in the siege ended and the commander then had to (very expensively) persuade them to stay.
Medieval armies were not standing armies, but went out on campaigns and had a period of service, at the end of which the soldier could simply go home.
And with regard to the use of human or animal faeces as a means of defence - it is known from the siege of Neuss that the attackers complained loudly to the besieged because they had repelled them with faeces. They demanded to be fended off with stones and arrows again because throwing faeces at them would violate their dignity (and the well-developed sense of cleanliness of medieval people, which is often ignored today).

I love military history like you. You nailed it when you said you'd like to witness it without actually being a part of it. But I've always imagined myself in the battles but exempt from death. In other words, I would be on the battlefield, fighting alongst the Roman Legions, but I could not be killed. Strange idea, but you would get the full immersion.

It’s hard to believe that beer was brought to a boil to practically toss it “overboard”. It has been food and bees wouldn’t necessarily like it but rather take off. Wasps might be drawn to it but those would probably not live in a hive to just wait for boiling hot treats.

Would like to see how it would of turned out for Napoleon if he had a Gatling Gun or if the British had a tank in the Civil War in the US.
