  • A simple but delicious Middle Eastern lentils and rice recipe, Mujadara comes together with only a few pantry staples. Naturally vegan, this recipe consists of lentils, rice, and perfectly caramelized onions served with a dollop of Greek yogurt. It’s excellent as a main or side dish or any meal of the day.
    Full Recipe: cookingwithcoit.com/mujadara/
A classic Middle Eastern dish, this mujadara recipe is extremely easy to make. Mujadara is an Arabic word that means “pockmarked” as the rice looks pockmarked by the lentils. It’s a simple but delicious dish that is flavorful, rich, and comforting despite being made with budget-friendly pantry staples.

One of my favorite recipes. I discovered it in Lebanon nine years ago, a country known for its amazing gastronomy not only in the Middle East but also in our country and Europe, particularly in France and the UK. The thing with Lebanese food is time! It’s quite complex and time-consuming, but it’s worth it.

In Palestine usually the caramelized onions are split into two portions One portion goes in while lentils and rice/bulgur are boiling, the second portion at the end on top. It comes out more flavorful

It looks nice but it's different from the mujadara of Syria. In Syria the only thing we add to the lentils and rice is salt, the simplicity is the beauty of this recipe. Then for caramelizing we add more olive oil, we leave the onion till it becomes a little bit crunchy. And the finishing touch is dripping the oil over the cocked rice and lentils, this way they are not dry.
You should really try it with only salt, you'd be surprised.

I grew up on this stuff (I'm 72) when my great auntie fixed it for many Sunday dinners. The only difference was back then she didn't even know what cumin was so we've only used salt, pepper, garlic, and cinnamon (in tons of Lebanese dishes). I was ready to make some and put lentils on my grocery list but then remembered that I still have a bag of black lentils so may use those. Thanks for the video!

It’s a popular dish in the levant region. You did a great job. I cook it all the time a guy who came from there. I have been replacing the rice with riced cauliflower to reduce the calories.

I’ve wanted to learn how to make this dish. Thanks! Lentils intimidate me. I usually overcook them. But most recently homemade bread is something I was afraid to make. I’ve gotten over that hurdle so now I’ll try lentils. Also I caramelize onions in bulk, let them cool, and spread them out on a cookie sheet and freeze. Once frozen, I break them up and bag them up so I always have some ready to go.

I wonder what sautéing a small amount of the onions with the spices, salt and garlic before you add the water, lentils and rice would do to the taste of the dish. Blooming the spices are helpful for creating a complex flavor profile
