here's several suggestions worth trying choose the top type - there are many available. grow them in the best conditions - some eg oyster muchrooms like cool humid areas and may be put outside (I learned these and why they work from Gregs Mushroom Grower website )

any white wine will do. you don't need something expensive for cooking. perhaps a mini bottle would be a great option since you won't be using it after the recipe
I have a question: did the mushrooms come out rubbery when you prepared them? I’ve tried cooking with the King Oyster shrooms before in a faux scallop recipe (not yours 🙂)and the texture was horrible. Any suggestions or tips? Thanks.
I use another recipe that boils them for a few minutes then lets them sit in a seaweesy umami flavor sauce before you sear them. I think that helps with texture. I mostly come for her white wine sauce recipe. I think any vegan dupe dish should try harder to mimic flavors.
Sandra Carli fats are a natural, healthy part of a balanced diet, and the human body is well-equipped to handle (and benefit from!) the moderate amount of olive oil used in this video. if you think THIS is a lot of olive oil, you should try middle eastern and mediterranean food 😂

As long as you don’t consume a lot of oil on a daily basis, I believe you should be fine. I believe in a balanced diet with a little bit of indulgence from time to time. This is an occasional dish.

I've seen gigantic oyster mushrooms at Asian markets all the time. Most are organic too, if that matters.

I’m obviously not op but Sauvignon blanc, Pinot Grigio and Chardonnay are good ones to use. Nothing too sweet is the key.

Barbara Smith same here, it looks eerily similar but the texture is far far far from a scallop. The taste is great as pan seared mushrooms.
