- This Video will show you how to make a Katsu Sandwich from Scratch incl. the Shokupan a Japanese milk bread.
9.5 Inch Pullman Loaf pan
Tangzong
4tbs (60ml) wasser
2tbs (15g) Flour
Shokupan:
Tangzong
2 1/3 cups (275g) Bread Flour
1 1/2 tsp (4g) Yeast
1/4 tbs (5g) Salt
1/3 tbs (8g) Honey
2 2/3 tbs (40g) Heavy Cream
2/3 Cups ( 145g) Water
2 tbs (25g) unsalted Butter
Katsu Sauce:
1/2 cup 140g Ketchup
2 tbs Soy Sauce
1 tbs Mirin alternative rice vinegar
1 1/2 tsp Worcestershire sauce
1 tsp grated fresh ginger
1 clove garlic
2 tbs Mayo
1 cup white finely cut Cabbage
10 min kneading
15 min kneading after adding the butter
1 hr bulk ferment
1 after placing in the Pullman form
350F 175 C (30-35min)
