I harvested my first fennel of the season yesterday. Sliced very thin, dressed with vinegarette of lemon juice, lemon zest, shallot minced, salt and pepper. Then top with parmigiana cheese and chopped parsley. Delightful served along side chicken.
I don’t usually cook fennel. I like to make a salad with the fennel bulbs and grapefruit and tomatoes. A little olive oil and salt and pepper. Let it set for an hour to meld the flavors.

60 fps works a treat Tony. Smooth, sharp & clear picture and excellent audio. Agree with Amanda R's description of how to cook fennel which also works when cooked in an air fryer with a splash of lemon juice after cooking. Have grown Marmande from seed this year (20p a packet at lidl - bargain!) without a greenhouse. Couple of weeks off picking but the amount of fruit developed is brilliant.
When I was a chef, in the summer and going into autumn we use to make fennel slaw, with finely sliced fennel, cabbage, red onion,treated carrot, sprinkle over the night before with a couple of table spoons of cider vinegar, to slightly pickle and soften the vegetables, then next day fold in mayonnaise to consistently you like and add salt and pepper to taste, hope you like this idea, myself I don’t like fennel, if from childhood with uncle joes American mint balls which where aniseed flavour, and I can’t stand the flavour not, but like Steve on green side up will tell you as a chef you have to taste everything to make sure it’s right even if you don’t like it 😂, picture quality was fab.
Video quality looks good! But I believe the ONLY reason to grow fennel here in zone 6b/US, is to feed the butterfly caterpillars-they LOVE it! The only other reason for me would be to get fennel seed for use in cooking, the plant itself you can keep! Good luck & happy gardening!
Tony everyone on our site has packed it all in mostly as the relentless heat has just killed almost everything off,if you think it's hot up north ,hear right down South its just none forgiving 39c in the house and 41 on the allotment.All l have to show for all the work since February is Aubergines,Tomatoes, Onions, 6 cabbages and spuds. Fennel 🥴 can't stand the stuff,grows well looks pretty but not for us.All the very best bony lad 🌱🌱🌱💕
Video looks great. Fennel is delicious. Add it to coleslaw or my favorite way is to pop it in the oven with lashings of double cream and serve it with some grilled fish and crusty bread. It's lovely like this with some grilled salmon or chicken.
I'm definitely going to try growing some fennel next year. I enjoy lemon and fennel risotto (you can include chicken if you're a meat eater) and in salads. My guinea pigs go crazy for raw fennel as a treat.

Fennel tea is amazing!! If you dont want them send them to me lol. Love fennel tea but I have the tiniest yard with a severe lack of light & can only grow herbs in a pot. so I struggle to grow anything. Love your allotment & am so jealous!! Stay safe x
Fennel is a great vegetable to grow. I grow it every year and use it raw in salads. I have also heard that it can be pickled which I am going to try this year
Massive improvement on picture quality Tony. But you don't really need to shoot 60fps you could go for a 4K setting ant 25fps and it would still be amazing.

From a totally non-tech person, the video was really clear & looked more like watching HD on the telebox! I can’t stand fennel so can’t help with that I’m afraid.
I wouldn’t personally cook fennel I think it’s better used for salads. Chop it really finely - that’s a good rule for salads in general. When veg is chopped finely in salads it feels more fancy

It looks absolutely fine Tony, the light etc was good, and no problems. Fennel doesn't seem to have many bug enemies, I dehydrate some and powder it for tastes in all sorts of food like soups etc, and have a fennel tea, which is good for all sorts of things. You can put it in potato mash, like celeriac. It can go into pasta bakes, vegetable savoury crumbles. I have heard it is good with fish, but like your wife I'm not a meat eater. I've jumped in with some plants too so I'll be experimenting - some in the tunnel and some outside. My spring fennel bolted, but I still cut the fronds up and dehydrated them so they didn't waste. Yes, walking stick cabbage, I also have 4 walking stick Kale. They last for about 5 years and not only provide me but it means the hens have greens all year round. I also have 9 star broccoli which is also perennial up to about 5 or 6 years, and you get loads and loads of cauli like spikes off them - haha they are all drenched in cheap garlic powder today. It is the only thing I find the dreaded white butterfly doesn't like. Sorry for the long one 🙃😄, all the best Amanda

An insect that eats fennel is the caterpillar of our largest and sadly rarest butterflies, the Swallowtail. No problem for fennel growers outside the Norfolk broads. Please note that it’s illegal to disturb the caterpillars of this endangered species.
My favourite way to eat it ii raw in a salad (on its own). The dressing is olive oil, lemon juice (fresh lemon) and a sprinkle of salt. That' how it's eaten in Italy.

Cover the fennel with the netting for a while. It will give them a little shade in the heat, until they get established.
