  • This Caramelized Onion Bread is by far one of the best bread recipes. This bread is soft and fluffy and it smells wonderful while baking. The caramelized onion brings such a wonderful flavor.

    Ingredients
    Makes 1 loaf
    Caramelized Onion
    1 large onion, chopped or thinly sliced
    1 bunch green onion bulbs, chopped
    2 tbsp olive oil
    salt
    Dough
    4 cups (500g) flour
    1 tsp (5g) salt
    25 g fresh yeast (2 1/4 tsp active dry yeast)
    1 bunch green onion leaves, finely chopped
    1 1/3 cup (320 ml) warm water
    caramelized onion
    1. In a frying pan heat oil over medium heat. Cook onion until soft and golden brown, for about 7 minutes. Season with salt. Set aside to cool.
    2. In a large bowl, mix flour with green onion leaves. Dissolve the fresh yeast with salt and 1/3 cup (80 ml) water and add to the flour mixture. Add the rest of 1 cup (240 ml) water, mix everything together then add caramelized onion and knead until the dough is smooth and pulls away from the sides of the bowl. Cover it and let it sit for about 1 hour at room temperature to rise until doubled in size.
    3. On a floured surface roll the dough into a loaf. Place in a 6x10 inch (15x25cm) baking tray and leave to rise again for 30 minutes. A regular loaf pan should be as good. Optional sprinkle salt and few green onion chopped leaves on top.
    4. Preheat oven to 470F (240C). Place a small pot with water at the base of the oven to create steam.
    5. Bake for 15 minutes with steam then remove the pot with water from the oven.
    6. Reduce oven temperature to 450F (230C) and bake for another 10-15 minutes.
    7. Cool on a wire rack. Let the bread cool completely before cutting.

    As a retired bakery lecturer and demonstrator, I would agree with the comments below that you should never put the salt with the yeast as it does kill the yeast by drawing out the moisture in the cells. The salt is best dispersed in the flour before adding the yeast, dispersed in the water. Another point is, for those that mentioned sugar. There is no need to add sugar to fresh yeast as it will start working by converting the starch, in the flour, into simple sugars that it can digest and turn into carbon dioxide and alcohol. You only add a little sugar if you are using dried yeast and it needs activating.

      When I combine sugar and salt in warm water and add my yeast to the solution and when it rises I add to the flower. Been doing it for years and I have no issue.

    I made caramalised onion buns today because I don't have a loaf tin. Crust was crunchy and soft inside. Thank you for such a great recipe with clear steps in your video.

    I tried it with some variations: added 1 tsp sugar with yeast , 2 cups flour instead of 3 and because it was undercooked when done I baked it for 10 more mins .. turned out awesome !

    I made this with broccoli and cheddar soup. It was amazing! I divided the dough in 2 loaves since I have smaller baking tins. My family loved it!

    I made the bread exactly as shown in the video.
    Salt over yeast didn't hurt anything.
    It may have killed off some of the yeast but the bread rose fine.
    I put a big char grilled juicy hamburger between two slices of this bread and all I can say is wow!

      You can of course use leek, red onion, add garlic if you like, but what we do not know is how much flour the author has put and that is important . I would like to get a reply, please.+Chippy Sneha

    Baked this bread today. It was delicious, I forgot to salt the onions after I cooked them, but the teaspoon of salt that I put in the yeast and sprinkled on top was good enough. It was delicious, thank you for the great recipe

    Just made this recipe. Yummy bread and very easy. I used dried yeast and I tend to add the salt after the first rising when I'm knocking it back.. Many thanks for posting this recipe.

      hello, in the video i see yeast and salt were mixed. while so far I know, salt will kill the yeast. should i leave yeast only with lukewarm water and add the salt later?

    This is yummmmmmmm and yes a vegetarian’s dream. In South India this kind of bread is called ‘Khara’=Spicy we add finely chopped green chillies and to make it even more special finely chopped Dill (Sooee Kae Pattae) can be added. Buns are also made similarly and called Khara Bun

    Two times I tried this one with whole wheat flour and turned very soft and fluffy kind. The better part of this recipe is its simplicity. I added tomatoes and cilantro with onions and spicy chilly powdwe while sauting them

    Just made your bread it tastes delish! I made a batch of caramelized onions a week or so ago to eat on crackers with cheese etc but then just saw this recipe. Mine came out a little darker on top so next time I will lower the temp of my oven slightly I think it's a little hotter than most. I'm loving your channel I like the style of your videos and the way you have both types of measurements saves me a step from having to convert it myself :)

    if we use dry yeast the yeast wont be activated until it gets a little amount of sugar i tried it in a pizza recipe it didnt work so if we add salt we wont have the right dough but what a beautiful recipe i am currently making your homemade pizza now its in the oven smells wonderful

    are you sure that the yeast should be mixed with the salt ? ? i know that the salt kills the yeast . did you mean to mix the yeast with sugar maybe ?

    For all the people commenting about salt, take a closer look at the video, she has actually put sugar. I think she accidentally wrote salt when in fact it was sugar.

    salt kills yeast !! 1:10 it should be sugar btw ☺ Also, I would add the onions later so that they don't break during the kneading process ...

    Never salt with yeast XD i recommend sugar with yeast so it helps to rise well. Salt should be added in a second time while you work the dough :)
    It looks delicious !

      you can simply add salt in the flour ..this is what I usually do.. in the video I guess I just got nervous :))

    I have question on the oven...do you put it in the lowest rack? and the heat should it come from top only or top and bottom?
