- If you love Ted Lasso (Apple TV+), you'll know of Ted Lasso's biscuits! Ted delivers a little pink box filled with beautiful shortbread biscuits to his boss every morning as part of his 'biscuits with the boss' initiative. In episode 6 (of season one), he eludes to his boss that he has perfected his biscuit recipe! Well, this is Ted Lasso's perfected biscuit recipe!
Ted Lasso's biscuits are essentially a classic shortbread biscuit. It's a really simple recipe and only requires 4 ingredients that you more than likely already have in your home; flour, salt, butter and powdered sugar. That's it! However by following the techniques I show you in this video, you can make the perfect shortbread biscuit every time - just like Ted Lasso!
Ted Lasso is an endearing, charming, and wholesome comedy-drama that you cannot help but fall in love with - and then binge watch every episode thereafter! I'm not keen on football myself, but the characters are storyline are so addictive! It also focuses on Ted's move from the US to the UK and integrating into a different society - something that resonates with me!

Hie Dani, I’ve not watched Ted Lasso but these biscuits are good to go into my mouth at anytime 😆! You can tell butter is the most important ingredient when even the vanilla queen is not adding any in! I’m going to try this today! Thanks for all the instructions- only thing that would help me is to know exactly how long to mix at the different stages (like you did for the first step with the butter).
That's fantastic! You're so welcome! 💖 Timings can vary depending on the stand mixer or hand mixer you are using, but generally speaking, you can mix the butter and powdered sugar for awhile without issues. I usually mix until the butter lightens in colour. However, when you add the flour, do not over-mix. Just combine long enough for the flour to become incorporated and then stop! Otherwise, glutens will form and the biscuits will become dense and chewy. Let me know how you get on and happy baking!! 🙌😻

First batch came out lovely. My latest batch have come over quite crumbly but still tasty!
That's really strange that your second batch came out crumbly! Crumbliness is usually a signifier of dry dough, which could be affected by the protein content in the flour used in your second batch. Normally though, you'd only experience this if you changed the brand of flour. Otherwise, I'm not too sure what could have caused that! I'm so glad the second batch were still tasty and thanks for letting me know how you got on! 💖😻

Is it possible to make several batches of dough and freeze them? I guess they’d need to be thawed before baking but would they be the same?
I’ve actually frozen them fully baked, and they come out really great once thawed. Just make sure they are wrapped well. I wrap mine in cling film before storing in a container. I think the texture would change if frozen before baking. 😻😻

hello! i love your video and just put my dough in the fridge to chill :) im making a test batch before christmas and have a question. Would it be okay to chill the pan overnight and bake first thing in the morning? roughly 8pm - 430am.

I love Ted Lasso and love these biscuits. I don't think my butter was quite as rich as yours, didn't have that deep yellow coloration. (I used a Norwegian butter...salted it turns out) The cookies are delicious though. Much better than the shortbread I've had.

Definitely a cup of tea - or a glass of milk! The first episode is a bit of a slow burner, so I'd say watch a few more episodes to see if you get into it. I believe episode 2 is when the biscuits are first featured! It's such a lovely, heartwarming show! We really dislike football, but love Ted Lasso! 😻😻

What can I use if I don't have a stand mixer?
You can use a hand mixer, or you can do it by hand - just make sure your ingredients are at room temperature. It might be a bit of a workout, but the shortbread will be great, and worth it! 😻😻

It was difficult to hold back on the vanilla! 😹 However these shortbread biscuits really don't need it! 😻😻

These biscuits will last around 3-4 days in an airtight container, but I've also frozen these biscuits after baking and they defrost perfectly! If you want to freeze them ahead of time, I'd suggest using them within 6 months! You're very welcome!! 💖😻
