Easy Turkish Baklava Recipe from scratch!

    Ingredients for Baklava
    1 big egg
    1/2 cup vegetable oil
    1 cup milk or mix of water and milk
    about 4 cups all purpose flour
    2+1/2 teaspoon baking powder
    pinch of salt
    for the filling: about 2 cups coarsely grinded walnuts
    also:
    150gr. butter
    for between each dough total about 2 cups corn starch mixed with 3 tbsp flour
    (It makes about 500gr. Can be corn or wheat starch)
    for the syrup:
    5 cups granulated sugar
    3 cups wates
    1 tbsp lemon juice
    utencils:
    rolling pin
    big round oven try

    wow..I started to prepare it at 3:00 am and finished around 7:30 am. From scratch it took me 4 and half hours to bake this superb delicious and heavenly tasting treat(I don't have kitchen aid dough mixer:-( ). For sure this is one of the best baklava in my lifetime. super delicious, beautiful and yummiest pastry I have ever baked. The taste is better than any store bought and wedding baklavas. I dare you try it. Ingredients are simple but its time consuming and serious recipe. The hardest part is to roll the dough into 48 pieces. Requires a lot of energy and patience. But the results are worth the effort. Important to mention some changes I made. Used salted butter, half cup milk and half cup water, 3 and half cup granulated sugar(per cup 180 grams sugar) with 4 and half cup water(sugar in total was exactly 600 grams), did not use pinch of salt, used natural walnut and salted pistachio pieces in separate layers, did not roll the dough in rounds instead in rectangular shape because of rectangular baking tray, used one cup corn starch, each dough ball weight was 17-18 gram approx. I used jewelry scale to weigh each dough ball, spread all syrup evenly on baklava but after one and half hour drain all the syrup through tilting method, after 2 hours of baking and draining all syrup wrapped the tray with cling film for better shelf life. I used standard baking cup to measure everything. 1 cup all purpose flour was around 140 gram. Personal thought...Fillo or phyllo dough is not the thing for this recipe. Water weight for one cup is 198 gram. I used 20 gram additional water for dough. One humble request to the author of this recipe: If possible always mention your measurements in volume and weight both. So it will allow everyone to take the step forward to go ahead. Weight measurements are very crucial for any baking recipe in the world. Thank you very much for such a delightful recipe. Love you

      Kashif Azhar Kashif Azhar Hello Kashif you welcome, I am very amazed by your detailed comment. In Turkey my followers always say that i give many details in the recipe so not much to get failure :) But unfortunately we are not used to weight the mesurements and people even dont like the recipes giving in grams. But sure you are right on your request. So thank you so much you share all your experiences. In total yes it takes little time but preparing for the oven is of cource less then that time, about lets say 1.30 hour.     All purpose is plain flour. Although they use special flour for baklava in stores t is not very reachable. I used plain too. If you try let me know the result, hope you will like it

    Merhaba, I made this recipe today and it was hard work, but nice work :-) My first Baklava ever, I spent hours rolling the dough balls, but the taste was cok güzel. So I think that I will do it again. Probably I will put the syrup on the hot Baklava, without waiting 10 minutes, because for me it was a little bit too crispy. Greetings from Bosnia :-)

    I tried making baklava many years ago but rolled each sheet individually and took me about 4 hours!!! I love baklava, my family is Hungarian and they have a recipe for baklava as well... however when my great grandmother would roll the dough she used her fingers and not a rolling pin! I am NOT that patient lol! I'm glad you showed us the layering technique because it will cut my time drastically! I will now try this for our Thanksgiving holiday thank you!

    I would like to add that I made this recipe and it came out Perfect, absolutely perfect. My husband does Not eat baklava at all but when I finished this he tried one piece then another then another until he ate 1/4 of the pan!!!! This bakalva is a huge difference then making it with store bought filo dough. I will never ever go back to making it that way. If I don't make this recipe from now on then we don't eat baklava. It's this or nothing!! Thank you so so much for sharing. Can't wait to learn how to make other wonderful Turkish recipes. Absolutely LOVE this recipe.

    I am in heaven right now..Even though I've cooked all over the world baking and sweets are not my thing..This however is just incredible and to see how the pastry is made..WOW..this must be one of the hardest simple desserts ever if you understand my meaning..I'm doing this...I've shared this with some friends on FB so I'm hoping to get a challenge going..We'll see who does better Britain or America..Should be fun

      Baklava is a Greek sweet, it's name comes from the greek words 'bakos' (μπέκος) which means bread in ancient greek and is used to name the tough part and 'lava' which is used to name the melted part of the sweet (lava as in volcanoes). The recipe is described in ancient greek documents, 2500 years old, it's first name was plakountas (πλακούντας in english placenta). During Byzantine years this greek sweet was very common all over Minor Asia, west half of modern turkey (which was greek then) and when Minor Asia was taken by Ottomans it was spread in all Ottoman countries.

It truly is an art and reminds me of all the recipes from our parents, grandparents etc that should be treasured.       It was amazing! Very, very sweet. I added a little honey to the syrup and used a 30x40 cm dish for it :)
      Tip: If your oven has a fan setting, DON'T use it. The layers are so thin, you risk they will blow off.

    I have seen a recipe that added honey with the sugar syrup, included pecans walnuts, and pistachios in one mix, and used spices such as cinnamon, cardamom, and cloves. This leaves me with a question: Is there an official authentic "Türk" recipe or does this recipe vary from city to city ve ev ev?

      Junipa Contento Hello Junipa, lovely Turkish you have, çok güzel:) Teşekkür ederim for your comment:) Actually in Turkey even though recipes may vary we don't use spices that much. It's is probably coming from Middle East and maybe Greek variations. We don,t mix the nuts too. Just one at a time:) Pistachio and walnuts are favorite ones.But if you have pecans in your country çok fazla:) you may use that too. It has lovely taste. Hope you try and like the recipe.     I have never seen Baklava in a circle. It's so pretty when cut like a star! I was just checking on the best way to cut baklava and found your recipe and directions.     Merhaba. I probably try this recipe during the weekend and have a question, if you don't mind. When you pour the syrup at the end, does it have to be hot or cold? I know from past experience, that when pouring hot syrup on hot dough it becomes soft and kill the crispness, so I wanted to make sure which way to go about it. Many Thanks and Gd Bless You!

      Merhaba, I pour the cooled syrup (at room temperature) over the baklava has been cooled for about 10 minutes after comes out of oven.. (I mentioned this in the video with note when i pour the syrup) As you said it is important in order to not to get soggy.. Also don't cover it completely when you store to help to stay crispy longer. Hope you will like it. Please share the result with us!:)

    Hello, may i replace walnut with another such a almond or anything else? In my country really hard to find walnut. Need your recommendation to substitute that walnut.

    thank you very much for sharing the recipe... if the oil is 1/2 cup then from the picture the milk looks like 2 cups but your recipe says 1 cup of milk, could you please confirm the amount of milk??? thank you it looks delicious, cant wait to make it, will definitely tell you how it came out when I do make it

    In the east asia steps near chine and sibiria, the old turkish people have cooked baklava for 2500 years at least. But there was no sugar so the cooked it from walnut, thin dough and butter. At that time, butter like jogurt was found in nomadic tribes generally in asia steps turkish people (not in Greece) they were nomadic because they were following their animals to find more green weed and vegetables to feed their animals. Later some people added this baklava some grape molasses before production of sugar. But the original baklava does not include sugar. Its is also very good with butter and walnut without sugar. It was cooked between two steel plates. Original baklava should be cooked by the slow flames and burning of animal (like cow or sheep) dry turd. This is what the nomadic people could do. (the word bak-lava is a turkish word for example another word ending with lava suffix in turkish is ok-lava (a wooden rolling pin to make dough thinner for baklava )) It is very interesting greece claims that jogurt is a greek product!!. How could it be? there are lots of turkish word originating from turkish basic verb 'yogurmak' (jogurmak). Yogurt (jogurt ) is one of them. yogunlaşmak for example means being denser. Jogurt is a dense form of milk as a product. so the name is related with being dense. Yogun means dense in turkish. If you have a suspect for origin of anything, then controll the name of it. The origin of the word gives the right answer. This is not one example what greece did claim. There is a turkish person in turkish visual arts. the name is karagoz (kara means black goz means eye in turkish) they say he is karagozis (they add greek is suffix to make him greek) not karagoz. what a bullshit.

      George Clooney I don't think that you need to be like this. We can all look into our histories and find things that are not good. It is not true what you said about the Turkish people. You cannot blame all people for what some people have done. You cannot take away everything that a culture has provided because there are some things that are not nice. Turkey has been called the seat of civilization. Istanbul going way back has been a port. People Gather in port cities. They learn things there. The market has been famous for thousands of years. Famous for its spices and many culinary delites. That doesn't mean that Greece has not contributed things to this world. Democracy being one of them. Armenia contributed much. But that does not mean that you should come on This Woman's site and say horrid things. I have ancestors and family members that are from Ireland.     Wow this looks like a great way to make baklava. I always been put off by how fiddly sheets of filo look to make and bake with. I don't know why i've never thought to make it like this before lol. So now I can try and make a dessert i really enjoy. Cok tesekkurler :)

    this is great! thank you for sharing. I have never seen the traditional way to make the dough before so I appreciate your effort and skill. My question is, where are the spices? I have always added cinnamon etc with the nuts. Is this not the right thing to do?

      Either the sirup should be cold and baklava hot or sirup should be hot and baklava cold (always opposites) :) That way the sirup is going to stick faster to baklava and is not just going to sit there for hours and just sit on bottom

      Hello, I am planning on trying your recipe. I have watched a few videos on "how to" most of them brush butter between each sheet, but you pour it over the finish build... (which I prefer, because it seems best)... I'm wondering why yours is different?

    Greetings from Bangalore, India. I had not eaten - nor even heard of Baklava until 3 weeks ago when a friend of mine recieved a box of baklava sweets as a gift. My research began and your video is one of the many I saw. Of all the videos I saw yours is the best for me. I think you teach well and your final comment offering help if we need is so beautiful.
    I then ordered a few pieces from a restaurant just to taste them. They were expensive but quite nice. So I decided that I should learn to make Baklava.
    I made the sheets last week and froze them. Today I took out a small batch and made 15 pieces in rectangular shape. To my surprise and joy they came out very well in the first attempt.
    It is such delightful dessert and I made them today to be ready for 31st evening so that I can welcome the New Year with a new and what is for me an exotic sweet.
    I think I can make the phyllo sheets even thinner than I made now. I used a mix of pistachios and walnuts, lightly toasted and coarsely powdered. I made three layers of phyllo with two layers of fillings. I poured warm syrup on the baklava which were allowed to cool for about 10 minutes or so. Half hour later the syrup.was nicely absorbed.
    Thank you so much for teaching me this. I am already talking about it to friends and family and I am sure this will spread in my circle.

    Wow, filo dough from scratch! That's a little to intense for me, so I'll stick to store bought. So they don't use spices in Turkey? (Cinnamon, cardamon, or nutmeg?) Also, not even a little honey for flavor? (Although I guess it could get lost with all the sugar).

    All baklava recipes on the Internet show buttering of every layer but this recipe is different. Now I’m really confused. Could anybody tell me if dumping butter in the end gives the same result?

      Hi thanks. The baklava has 3 layers. Each layer has 16. You put ground walnuts after 2 batches of 16, then finish it with top layer batches ☺️

    No BAKLAVA it is originally a food for Arab...Ar baḳlawī بقلوى örme zincir.(knitted chain) arap historians wrote it. lahmacun and kebab are already cooking arab..arap people say leh...lehmecun..this is Arap word.

    For best baklavas in 'da' world.... go to GAZIANTEP in Turkey.... it is totally worth to fly and spend time. When you go try other food too not just baklava. Antep is the food mecca of Turkey.
