Hi Sophia. Thank you for the video. I followed your recipe but without cream of tarta (i never used it before). The egg white came out nicely...until i added the vinegar & corn flour. It became liquid 😭. Throw it away, made another batch, add corn flour only... it became liquid again. Made 3rd batch. Took the meringue out without adding vinegar & corn flour. Gently folded that 2 ingredients into the meringue...the meringue became very runny 😭 I have made pavlova many many times over the years just with a hand mixer...never got some thing quite strange like this. What did i do wrong in the Thermomix? Thank you.

You could actually taste the vinegar in the meringue putting in the recommended 20g. Is it possible to reduce the quantity or use lemon juice instead with the same effect however? Also cooking for 1.5 hours at 100C Fan it was perfect outside but totally undercooked inside - better to slightly raise temperature or cook for a little longer ? Advice for the egg whites however perfect, Thankyou!
You shouldn’t be able to taste the vinegar at all. Perhaps your vinegar was stronger than normal. You can reduce it to 10g if you like. The undercooked inside tells me that your oven might be slightly colder. Ovens can vary up to 50C in temperature at the same setting. Try using a temperature thermometer next time and perhaps raise the temp to 120.

Yeah, i am with Lisa on this.I end up not eating at at all.A bit disappointed.
